Crunchy and refreshingly cool salad worthy of any occassion!
- 3 cups chopped peeled English cucumber
- 2 cups chopped tomato
- 3/4 cup finely chopped red onion
- 1/4 cup finely chopped fresh parsley
- 3 tablespoons finely chopped fresh cilantro
- 1/2 teaspoon salt
- Combine all ingredients in a large bowl. Cover and chill at least 2 hours. Serve with a slotted spoon.
