What a great healthy light snack for in between meal times. Cucumbers and cottage cheese are such a good combination, you'll be left wanting more!
- 1 English style cucumber
- 1 teaspoon parsley
- 1/4 teaspoon basil
- 1/2 teaspoon chives
- 3/4 cup low-fat cottage cheese
- Cut cucumber in half lengthwise.
- Scoop out the seeds from each half, and hollow the center with a spoon.
- Mix herbs with cottage cheese and spoon into hollowed cucumber halves.
