What a great healthy light snack for in between meal times. Cucumbers and cottage cheese are such a good combination, you'll be left wanting more!


  • 1 English style cucumber
  • 1 teaspoon parsley
  • 1/4 teaspoon basil
  • 1/2 teaspoon chives
  • 3/4 cup low-fat cottage cheese


  1. Cut cucumber in half lengthwise.
  2. Scoop out the seeds from each half, and hollow the center with a spoon.
  3. Mix herbs with cottage cheese and spoon into hollowed cucumber halves.
