We're trying to cut down on meat in our diet right now. I learned how to cook with meat in every lunch/dinner/supper/whatever you call it. I'm not sure how to implement beans and other healthy proteins. I don't know where to start! I need to research it. No excuses, right?
And, yup, I need to spend more time telling myself that I, Selena, can achieve all this on a limited budget and with family and college and even if it's raining on Tuesdays and the dog ran away from home while the kids were fighting and the hubby is on a 12 hour shift and my grandpa is in the hospital and my car brakes are making a funny noise. I know I sound preachy, but you have to be disciplined about things if you're going to seriously lose weight. You can do it. You think you're the only one with a busy stressful life? Look at Jenna and Griff. They are my heros. They have busy, stressful lives, yet they don't make excuses, and stick to the plan. My life is full of crap, too, but I feel worse if I don't eat right and exercise. I spent 9hrs with my gran in the ER/hospital one day, and it rained, but I still got my exercise in, and chose a grilled chicken salad at the hospital instead of the yummy deep fried crap that I really wanted to eat b/c I was worried about my gran. I just told myself that I wasn't going to use all that as an excuse not to eat right and exercise. And you feel sooo much better when you stick with the plan. I think you know that from when you have good days.
Why are you trying to cut down on the meat? You need protein in your diet. Meat isn't the only way to get protein, but it's one of the easiest...lol. Tofu is a good meat substitute, but it tends to be as expensive or more than some cuts of meat. Beans...beans, nature's fruit, the more you eat, the more you toot! haha

Garbanzo beans (aka chick peas) are great protein. I make hummus with them. Take a can of beans, drain them, but into blender along with a a tbsp of olive oil, lemon juice, garlic (powder or fresh) and blend until smooth. You can put it on bread or tortillas, or eat it with just about anything. I like to make stirfries with black beans. Hope that helps. I'm sure there are tons of bean recipes online if you do a search.
