Thanks for the tips on the weekends. I think I will try that this weekend and see how it goes!
I def. like having some low-fat scones I make ont he weekends or bagels with some light cream cheese. yum! 
As for what I do for dinners, well for example last night was a hamburger patty without a bun. I pan cook these with some lite teriyaki sauce and seasonings. And if FH is around to eat with me I cook an additional one for him and give him a bun of course and any toppings he wants.
I'd just have steamed veggies on the side if needed. Tonight I cooked up some chicken in a pain with stir fry sauce and some veggies. Normally I do this with rice, but to avoid the carbs I skipped that, my veggies were carrots, broccoli, and onions. I'm not sure how "carby" they are.. but well I figure, its better than having a bunch of bread or pasta! 
I would also try making a salad and spicing it up with some bacon bits for your FH, and different veggies etc. I can't swing the cottage cheese myself. So you could also grill some fish, chicken, or steak and keep the portions sized down for your sake and he can have the larger portions.
