A friend gave me some Gochujang. I had never tried it and I like spicy things so why not. I know @LaMaria post YouTube vids every so often so I looked on there and found a very simple recipe for Bibimbap. I have so never heard of that either so i figured id give it a try and OMG sometimes simple foods are the best.
I've been disecting recipes in an effort to healthy them up for so long I don't think I can just follow a recipe anymore..I swear even a simple fish and chips wouldn't be safe with me. I had every intention of doing it exactly like the video but I could hear @cate saying "What no veggies."
I remembered I bought some fresh beets the other day and haven't gotten around to cooking them yet.The greens attatched to the beets were starting to soften so heck why not....
I made a mixture of onion, garlic, and the beet leaves and stems and sauteed that in a lil olive oil. Then I added some ground/minced buffalo meat or bison if you wanna be politically correct. When the meat was mostly done I added the Gochujang, a tsp of honey and a shot glass full of water and gave it a min to get all yummy . I put that over a single serve brown rice and added an over easy egg with a small amout of sesame oil drizzled on top. Once I mixed it all up I couldn't believe how good it was. Ooo I'm all for new things working out! I'm pretty meh on beet greens but I can see them working in such a flavor-intense dish.

Yea the spice is so strong that it covers of most things. If it wasnt for the red and green bits i would have never known.
 
Breakfast- 6oz 2% milk, 6 green grapes.(140 calories)

Dinner- home made burrito(? Calories)

I got tied up with some research yesterday. Dinner was just what was there. By the time i realized I was hungry it was too late to think about making anything so my daughter threw a home made burrito together for me. it was a L.C. Lavash wrap with refried beans, some ground taco beef and some avocado.
Yesterday should have been ok calorie wise. Im guessing 2100 calories or so...
 
My scale has officially lost its mind. My son got on it and it said 476 and he's around 160. So I'm not about to get on the thing..
I'll get another in a few days to see where I am. I have the strangest feeling the number wont be good ad I'll have to go 0 carb and 1000 calories for a month or so.
 
today was research paper and powerpoint presentation day so didn't actually cook.It was just snacky....

Breakfast- Protein shake.

Lunch- Chicken tandoori with spinach, 2 lavash bread wraps.

Dinner- whole wheat english muffin with peanut butter, 4 green grapes.

Fresh beets are amazing. I'll have to start buy them; even though they are carby lil suckers.
They taste way better than canned. Kinda like how fresh potato taste better than canned.

Im cooking a whole salmon filet for dinner and some roasted beets might go well with it.
The salmon is 1lb 4oz or 20oz or I think about 567g. If that and 3 roasted beets won't fill me up; nothing will.

Id like something on the beets but no goat cheese or feta... Wondering if a small amount of blended cottage cheese and sour cream and maybe a lil mustard powder would be goat cheese-ish......hmmmm

Dinner- Baked salmon filet, broiled beets.(535 calories)
