I slept great last night. Went at a decent time. Did not get up to eat. Today I’m doing the same thing. Eating veggies for the entire day. Yesterday I did have bacon and egg for breakfast. I’m trying to have a plant based diet during the week. Just starting out. I hope I follow through today.
Breakfast was Dominican eggplant. I mashed it up and put in onion, cilantro, Sazon, and adobo. Pretty good. Lunch was collard greens. Snack was half a slim avocado. Dinner is butternut squash.
Went for a hike at the Castle trail.
