First off, breath. It's ok. Dont let the scale do this to you. Look at yourself. You are doing kickboxing, spin and other exercises. If that stuff is not enough to make you happy then I dont know what will.
I personally think weight watchers is a good program but it can be skewed. Maybe you should count calories for a while. Figure out how many you get subtract 500 and compared it to the points you are eating. See where your x amount of points brings you compared to your calories.
If you are eating at a calories deficit and exercising (unless something is medically wrong, which i will assume there is not) then trust the system will work. It is only 1 week, 1 month of the rest of your life. Do you think you will lose for ever? NO! Will there be some periods you maintain or gain a little abso-f'in-lutely.
