Lucy's Fit Life (Contains large amounts of nut butter and coffee)

Hey, good job on trying to live without coffee.
& cutting out dairy. I always try, but fail. I started to drink almond milk in my coffee - but it's just not the same. Oh! & I love my feta cheese.
Curious to see your atkins menu!
I still see the cinnamon roll on the menu. I bought all ingredients for it. They got delivered today. Even got an ironskillet...it looks smaller than on the picture...i can't imagine how i cd fit 8 rolls in there. Hope they come out well.

PS/ I love herbal teas! i have a cupboard full of them. Once you acquire a taste for them they are great! :)

I can only guess that Aussies are required by law to say Vegemite is delicious, like your voting requirements. I tried it several years ago and I may still have a little of the aftertaste in my mouth. It has kind of a metallic aftertaste.

I'm picking on you I realize and I'm sure I eat LOTS of thing that you'd find repulsive. Let's see...squirrel, snake, frog, turtle, jellyfish. I'm sure I could think of more.

Hahaha I grew up on vegemite, maybe that has something to do with it!! Also I find people think they're supposed to slather it on generously like jam or PB... NOT so lol. Slather generously with butter and then a thin scrape of vegemite *drool*

I can't say that I've tried any of those... I have however tried kangaroo (which is awesome) and crocodile which kind of tastes like tuna in a weird way lol.

Hey Justina! Actually I changed up the cinnamon recipe to an Atkins induction friendly one- it's still the same site: I will have to make a smaller recipe next time, it puffed right up and spilled on the bottom of my oven! Grr. Here's how it turned out though: View attachment 19705 To make it dairy free I added the yolks back in instead of cream cheese, and voila! It's kind of like a loaf of cinnamon roll angel food cake lol. Just wish I hadn't lost so much of it!! I'll have to make it into two smaller loaves next time. O, worth mentioning- I'm still using unflavoured whey protein isolate as it's pretty much lactose free and I've never had a problem with it.
Actually I've been dairy free for months recently- you get used to it...I was pretty excited about adding things back in but until I can get my stomach problems sorted it's off the menu again unfortunately!
Make sure you share how your rolls come out!! I make them for my husband a lot, made him another batch yesterday and made 6 out of the recipe and put them in a large 6 hole muffin tin. Hahaha they're cute, cinnamon roll muffins!

I hope the scale surprises you!! Glad you are feeling a bit better and can really go at it hard!

Thanks, me too, I'm not confident I'll see a loss though lol.

What have I been up to today... I've had another big play in the kitchen- I was so determined to come up with a pizza that was both dairy free and made from Atkins induction friendly ingredients... Here was the end result!
View attachment 19706

I made this into a pizza base: I only made a half recipe and spread it in the bottom of one of my pavlova dishes- I added yolks back in instead of adding cream cheese. Then I made a sauce out of tomato paste, crushed garlic and oregano and spread that over the base, chopped onion and spinach leaves, then added shredded chicken (I poached a couple of large breasts in the slow cooker today) and topped it with a white sauce I had to get a bit creative with... It's made out of whey, flaxmeal, psyllium, garlic, onion powder, macadamia oil, lemon juice, salt... Blended it with water, cooked it on the stove then blended it again to get rid of any lumps. It was SO GOOD!!!!!!!!!!!!!!! Having the last bit of sauce on my breakfast tomorrow. I couldn't go with a standard uncheese recipe as yeast and nuts are not allowed in induction. I was so stoked with it, it melted and everything!! (It was pretty solid after a couple hours of cooling in the fridge).

Also I thought I'd go for a quick swim this afternoon... there was a crab. In the pool. A FREAKING CRAB!!!!

It was dead, but the whole time I was pulling it up I was thinking omg... omg... what if it's actually a giant spider and there's more around... arrgh!!

Alright:

Almond butter cookies are in the process of being made. I'll update with results.

EDIT: I'm liking the Almond butter. It's like a peanut butter, but not nearly so overwhelming, and far more subtle.

And the cookies are about 150 calories a piece (roughly my dessert allowance) and taste like it too. Yum. I've now got 19 more to deal with. I'll give a few to the front office of my complex, and see how well I can resist temptation with the rest.

Ohhh hey, you must've snuck in while I was posting! Only just found this now!!!

HURRAY for almond butter!!!! Lol!!! I'm not even allowed nuts on Atkins for a few weeks, probably not a bad thing as I know for sure they're a trigger food lol. Glad to hear your cookies came out well!!!! (But I'd so just eat it from the jar, mwahahaha!!!)

haha cinnamon roll muffins - sounds cute I will defo put some pix in my diary this weekend of the outcome - fingers crossed i dont screw them up. i read the comments on maria's blog - some people managed to ruin them...plus i noticed i should have ordered a different brand of coconut flour. i got the bob's red mill...she said its a brand that doesnt work with this recipe..i hope she only meant the almond one. and i dont have swerve - soooo expensive - decided to go with either stevia or coconut palm sugar....see? plenty of places where i can go wrong.
Hope your stomach problems sorted and you can go back to eating yummies!

Wow - you are really putting in a lot of effort to make the atkins diet interesting & fun. I might have total misconception about it. As i had a friend who was on atkins; the only thing, two things she ate were meat & vegetables. And then my other friend was on dukan diet - which i thought was pretty similar too.
So i m impressed all the things you can have - i guess you just have to take the time & think about all ingredient combo & you can come up with some creative meals.
Good luck with that!

As for the crab in the pool!! gosh! how did it get in there? i only saw crabs by the seaside. not by the pool. what did you do with it?

I can't imagine you'll mess up the rolls- the flour I think she's referring to is the almond meal. I always follow the recipe in the video, not the one written down- and I use el cheapo coconut flour from a bulk food shop lol. I don't use swerve either, I use the same amount of xylitol instead and never had a problem (I like xylitol- minimal blood sugar spike, almost half the calories of sugar, not inflammatory to your body like sugar is). The only thing I thought I'd mess up was the rolling it up part and that is actually easy as!

As for food, I'm used to having to be extra creative because I refuse to live without my favourite foods, even if I am allergic to a few key ingredients lol. Just takes a bit of tweaking and research! Atkins definitely could be a meat and veg diet, but that's too boring for me hahaha. Induction is the strictest phase and it goes for 2 weeks- You can have unlimited amounts of all meat, eggs, poulty, seafood, butter, oils, 3-4oz of a few different types of cheese a day (cheddar, mozzarella, cream cheese), 3 tbsp. of heavy cream a day, 3 serves of sweetener (not sugar- I've been using stevia and xylitol for months anyway), all herbs/spices, and 3 cups of veg a day. The only restriction is no more than 20g net carb a day (so total carbs minus fibre- so you can be eating 40g per day with 20g fibre= 20g net carb) and most of your carbs are supposed to come from vegetable sources. So me being a little more restricted without cheese/cream I have to be a bit extra creative lol. So far so good though!

And I have NO IDEA how there was a crab in the pool, if it came from the beach that lil thing must've trekked a fair way!!! We are close to the beach but still several minutes away.

Crab legs for dinner!! Woo hoo!!

Mmm, I'm not really a fan of chlorinated crab...

My guess is probably a bird dropped it, possibly when it flew down to your pool for a drink. My parents had a dead fish in their pool once from that sort of thing.

Today was weigh in, no loss as expected. *SIGH* I'm going to stick 100% to this plan so I HAVE to see a loss this week. I just did 30mins of fasted cardio (swimming) so started my day with a 255cal workout. WOO! Then I had zucchini fritters again with the leftover sauce I made for my pizza. Was pretty awesome! Trying a heap of different teas out too, drinking fennel tea right now which is pretty nice. Still have my caffeine headache but I've had it constantly the last 3 days, it's not bad or anything it's just there lol. I only notice it when I sit down and chill out for a bit.

Food plan for tomorrow

B- Omelette with 3 eggs, chopped leftover salmon pattie, garlic, onion, cooked in butter
S- 2 pieces homemade 'cinnamon bread' with butter
L- 2 pieces leftover pizza, salad with cucumber, lettuce, avocado and homemade garlic dressing
S- 2 hard boiled eggs
D- Poached chicken breast with broccoli and butter

Exercise- 30mins physio, 30mins strength training- legs day!

Total calories: 1727 Total deficit: 701
Calorie average for the month: 398

I can't say that I've tried any of those... I have however tried kangaroo (which is awesome) and crocodile which kind of tastes like tuna in a weird way lol.
I've had kangaroo jerky and alligator. It doesn't taste much like tuna to me. Maybe croc tastes different? I would like to try fresh kangaroo, but for some reason I don't find it around here.

Stick with the plan, it'll happen for you!

OMG - Your food looks way too good for a diet!! you did a good job!
I hope the new diet plan will work out & you 'll have a smiley scale day next week!

Fresh kangaroo is awesome. Love that stuff.

Urgh me too, I'm over not losing! It's doing my head in!!

First day back into exercise today!! Today is legs day, good times. Feels like it's been months since I actually did a workout which is weird, it was only a week ago!!

I woke up pretty damn hungry this morning, so glad to get my eggs in. Weird, felt like I ate a heap yesterday. I think I can already see getting all my cals in will be slightly frustrating, might need to make a huge curry or something in a few days. I won't today as we are having a birthday dinner for Wade (I'm cooking a roast chicken).

Food plan for tomorrow

B- Really strange pancake experiment, hope it works!
S- 2 hard boiled eggs
L- Salad with leftover roast chicken, 1 cup lettuce, cucumber, capsicum, avocado, and homemade garlic dressing
S- Plain garlic pizza, 2 slices (just making a base and spreading it with the white sauce. Should be pretty damn good!)
D- Going out for dinner tomorrow, I'm hoping I can get a piece of fish that hasn't been floured otherwise it'll be a giant steak (calories below reflect a steak, though I'm not too concerned with cals at the moment, just carbs!)

Exercise- Physio stuff, 30mins strength (back and bis), 30mins swimming (straight after strength, no food or break in between)

Total calories: 1931 Total deficit: 745
Calorie deficit average for the month: 422

I must be getting my energy back or something... decided to do roughly 10mins (it was a bit longer) of HIIT boxing straight after my physio stuff- was painful after not doing it for a while! Got my heart rate up to 169bpm, wooo! Lol. I'm going to do that 3x a week on non swimming days to further mix it up! Means I'll be eating more today too- already upped it by having an extra egg, not sure what else I'll add in. Actually just had my cinnamon toast with butter (have I mentioned how GOOD it is??) and I'm completely stuffed. Not going to do my workout till this afternoon so I get 2 'after burn' effects.

That darned scale!! Have you been measuring yourself? Sometimes when you are already quite light, you will see change more easily with a tape measure than with a scale. Progress pics help with this too!!
Glad you're getting your energy back!!

Wow, way to go on the exercise!! You should see a big drop with all the cardio you are doing! Keep it up1

Hey yay!!! you are getting your energy back!! Great news!!You are doing a really good mix of exercise!

How was your eating out? Did you get the fish?

Speaking of food, Lucy. I tried the cinnamon rolls. & they came out awful.. i don't know what it did wrong. I even bought the same skillet - featured on her website. Everything looked great until I put them in the oven...first they were blowing up like a balloon (after like 30 mins). Then i poked them with knife & put them back - same thing happened. after 50 mins i took them out - & they were raw in the center. So I thought i might put them back upside down for a bit longer. It didnt work out. I was sooo disappointed. Any idea what might have gone wrong? has this ever happened to you?

Great job on the workouts and food Luz and glad to hear you are getting energy back :) My weight loss sucked this past week but next week will be better for both of us :cheers2: and everyone else too :D not trying to be selfish or anything lol

Glad you're getting your energy back!!

It's getting pretty frustrating, my last recorded loss was the 16th of Nov!! I measure once a month, actually my bust has shrunk a little and my BF% has come down around 1%... but nothing apart from that. I think it's to do with my food intolerances and water retention, really doing my head in! (Your body pretty much comes to a standstill fat-burning wise if you're retaining fluid). I'm pretty glad my headache is going now too, hurray!

Wow, way to go on the exercise!! You should see a big drop with all the cardio you are doing! Keep it up1

Hi Mands! Thanks for the encouragement, I'm really hoping I see a loss next week!

Oh no! I haven't had that problem, was your water boiling when you added it to the mixture (as in just boiled before you poured it in)?? Oven hot enough?? I usually bake them at 180C for around 40mins and they're done. They spring back when you poke them when they're done... Have you read through the comments at the bottom? Maybe someone else has had the same problem and they found a solution? That really sucks, they're sooo good!

I haven't lost weight in FOREVER, it's so frustrating when I haven't missed a workout (last week not included) and I've had a calorie deficit every week. I SHOULD be losing, I'm just not. Really hoping that mixing my food and exercise up a bit will get things happening again! Haha I'm sure you'll do great :D

Yesterday I couldn't stop eating- seriously, I just needed food. I didn't eat off my Atkins plan, and realised that even though I felt completely STUFFED by the end of the day... It's pretty impossible to over-eat on hard boiled eggs and chicken. Seriously I thought I was going to explode and by my reckoning I still managed at LEAST a 400cal deficit... I was up and about for a lot more than usual as I cooked a big roast dinner and dessert for Wade's birthday yesterday so I reckon it was probably much more than that.
Today I'm up and about a bit more than usual too- I woke up really early (around 6) and after lying in bed for a while I kinda went eff it, I'm going to get up and do my swim now. So I did a 30min fasted cardio swim and tried to incorporate intervals which is really hard when you're swimming- I just kept switching between freestyle/ backstroke/ breaststroke and only using my legs. I burned 250cals and got my heart rate up to 162bpm, yay! Then I made waffles for Ash and Wade and cleaned up afterward as well, and this arvo I'll be making another pizza and some more cinnamon rolls for Ash's work lunches. Also still have to do my physio exercises plus my strength training, so today is another big day. Going out for dinner tonight too, yay! Ash has a headache right now though so we'll see if that still happens...

Food plan for tomorrow

B- 3 eggs scrambled with capsicum, garlic, onion and avocado (cooked in butter)
S- 2 pieces homemade protein cinnamon toast with butter
L- Chicken salad with lettuce, cucumber in homemade garlic dressing
S- 2 slices homemade pizza (all it is is the base and the garlic sauce I made)
D- Slow cooked roast beef with broccoli and cauliflower

Exercise- Physio exercises, 10min HIIT boxing, 30mins strength training (chest and tris day)

Total calories: 1658 Total deficit: 836
Calorie deficit average for the month: 433
