Tuna caserole
1 bag of egg noodles I use medium ones
2 containers reduced fat sour cream
1/2 fat Kraft parmesian cheese (1 cup mixed in)1/2 cup sprinkled on top
1 can of all white albacore tuna if you LOVE tuna go for 2 cans
1 cup 2 % chedder cheese
1 teaspoon crushed red pepper
2 pieces of lite wheat toast (crumbled on top)
Ok boil noodles drain, add all the ingrediants above mix together then pour into baking pan and sprinkle on top the the bread crumbs,parmesian cheese,
crushed red pepper..Bake at 375 degrees for 15-20 minutes until brown on top
Feel free to doctor it up but my kids hate veggies like celery and onion which some people add to it.Goodluck
 
How many pounds has Chunky lost to date? And how does Chunky eat and work out differently than prior to starting her weight loss plan?
2 years ago I was at 180 and lost 40 pounds in four months, sticking to a 1400 cal/day diet and exercise every day. Then I gained some back ... slow creep over 18 months which ended with a week in an all-inclusive in Mexico...all you can drink and eat. In February I was at 165 and since then have lost 15 pounds and am hovering at 150. Prior to Chunky's weight loss plan, she was on a seafood diet. See food, eat it. lol I've always been an up-and-downer on my weight. But luckily, I come from a family of people who are into fitness and eat healthy, so cycling, jogging, aerobics, weights has always been part of my life and I always have a road map of how to get back on track. Part of my challenge is socializing and how to cut back while going out with friends who drink and eat because they are able to do it once in a while, whereas if I eat and drink with them ... I don't stop.

I'm reading this and thinking -wasnt Chucky the demonic doll who was the subject of several movies? then i realized -i can't read...

For years, we called a buddies demon spawn chucky behind her back - until one day we realized we had no earthy clue as to what this spawn's real name was.. mom wasn't pleased with us...

That's so great about the 10 minutes mile! You'll make it to the 8 minute mile soon. I couldn't manage a 10 minute mile right now no matter what, it's great that you pushed yourself to make it. Chunky rules man....

That tuna casserole sounds awesome. I always get hungry when I visit your diary.

Thanks Luke, I just watched the Stanley Cup final and of course my eyes watered to see those boys hoist the cup. A co-worker of mine coached Travis Moen, Chris Kunitz and Ryan Getzlaf from my province. To see Giguerre (also from Canada) and Teemu Selanne interviewed after and all the guys with their families really gets me every time. I was sorry for Ottawa but the better team won, that's how it has to go.

Today, big news...I got a job offer in Ottawa. No, not working as the new coach for the Senators...ha ha ha. I was offered a plum management job and I am both exhilirated and frightened. I am going to take it, and that means some changes for my family soon, but more about that another time.

Breakfast; Oatmeal porridge 260 calories, medium apple 80 calories
Lunch; low-fat cranberry/apple muffin 160 calories, tuna sandwich 290 calories.
Supper; 4 small pieces of spinach/feta pizza 420 calories, 16 oz. pepsi 200 calories
Total = 1410
No exercise except maybe one mile walk. I'm exhausted from insomnia last night so I have to go to bed. Tomorrow I'm going to visit other diaries. Luv to everyone!

Al and I went to the hospital this morning to have his packing removed and ... no bleeding. That means we came home and he takes the week off work but he's home free. The surgeon apologized and said in hindsight he should have cancelled the surgery on account Al had a cold, and in the future that's what he would do. Al later said he believes the guy had good intentions so if he's cool, I'm cool.[/B]

Wow Anna!! Congrats on the new job!! It is wonderful that your skills have been recognized and you are moving up! I hope the changes for your family that are involved with the new job go well and it's a boost up:) Yay!!!!

Oh I totally agree with Mishi! It is fabulous that your skills are recognized, and I'm thrilled that you're taking the job, what an exciting change for you. I really can't wait to hear more about it, how far away is it from where you live now? I think that's so fantastic, maybe finally you will be able to sleep! But then again, management doesn't sound easy or light in responsibilities. I just hope this one permits you good sleep.

I'm so happy you enjoyed the hockey game and that those boys won it's really cool they are from your region! My dad always tells me that I sound insincere when I comment on how great it is his team won, but it's not insincerity I promise, it's my knowing nothing about the sport people are discussing!

Good job on the cal intake, exercise is useless without good sleep.

Well, it looks like I'll be moving 1700 miles and three provinces over to get to the government city of Ottawa, the capital of Canada. Just across the river from Ottawa lies Hull, Quebec, where there are several other government buildings. Hull is where my headquarters are. Today they phoned to offer a two year acting assignment in a management position, after which the position will open up for competition and I can apply for it if I want. The reason they aren't opening it up for competition right now is because competitions for jobs take several months and they need to fill it ASAP. I'll be running a national program and overseeing all our regions across the country, as well as networking with two large groups for policy development and working internally to prepare submissions for Cabinet for program authority and Treasury Board for funding authority. It's a great opportunity for me, both personally and professionally.

I spoke to my boys and they were initially shocked at how quick they want me, and a little overwhelmed at the responsibilities now facing them. But now they're getting used to the idea. I told them I'd love them to come with me, but was not surprised to hear them both say they're staying put, because all their friends are here. They are turning 19 next month and ready to move out on their own. They're going to buy a small house together.

I have a real estate agent looking for a small house for my boys and he's coming over this Sunday to look at my house to begin the process of selling the house. Because houses have gone up in my city, I'll get $80,000 more for my house than what I paid, so I'll be able to pay off debt and go to Ottawa with enough for a down payment.

The boys can have everything that's in the house, as well as my car and they are really happy about that. When I get to Ottawa (Hull) my pay will be so insane, I'll be able to afford a 3 bdrm. house I have my eye on, as well as any furniture I need. The house was built in 2007 and has ceramic tile in kitchen, foyer and bathroom and the rest is hardwoods. There's a backyard with fence for Nig Nog. Yes, Rufus is coming to Ottawa. I'll lease a car after a while but for starters I can bus to work.

I've got a list of things to buy when I get there;
Bed, dresser, night table, couple comfortable chairs in the living room, coffee table, entertainment center with t.v., stereo, DVD. Eventually I'd like an elliptical trainer, full length mirror and some free weights and a bench. Maybe I'll put that stuff in one of the bedrooms. Ottawa has an Ikea, which I love for bed, mattress and dressers. A few dishes and towels and I'm all set. Oh, and a lawn mower! I'll box my clothes and my mom will send them on the bus to me, gradually.

They'll fly me to Ottawa for a week orientation, then fly me home to finish everything off here for a week or two, then fly me back to Ottawa for good. It's all very exciting. I'd be scared, but I'm too ready for an adventure in my life to be scared. I'm really thrilled. I know a few folks at my head office already and quite like them. As well, I have a good friend who lives in Ottawa, and I'll make new friends. I have no worries the boys will do well in setting up house. They've got their dad here, my mom and my sister, and all their friends. We'll keep in touch over the phone, email and MSN messenger. I'll fly them to Ottawa for Christmas, and hopefully my mom, sister and brothers will be able to come as well. The river freezes and everyone skates on it, many skate to work in Ottawa, how cute is that! Sometimes you see guys wearing suits, carrying briefcases, skating on the canal.

Many of my co-workers go to Ottawa for meetings and I'll invite some of them to come stay with me instead of a hotel. It all feels like a dream. I know I'm in for a challenge. I will grow in my interpersonal skills especially, because management really calls for those skills. I want to do a good job so they'll want to keep me after two years!

Well, that's a long diary entry, but I wanted to get it all down. Maybe if I type it, I'll believe it's happening. I have always been treated very well and valued by employers in various parts of Canada. Where I live now is the one place I have not felt so valued. It's a bit of a hick province and they are very much into the Old Boy's Club here, so as a woman, I had my doubts of ever getting a promotion. I'm glad to leave, if only to be surrounded by more open minded people. I will be sent on french language training because most everyone in Ottawa is bilingual, especially in government. Je parle en peu francais, mais je ne parle pas tres bien. I speak a little french, but I don't speak very well. ha ha
