Justina: Back to square one - very excited & determined to do this right

Check this out - it was Sunday morning and both me and my husband were up at 7am!!!! UGH :ack2: The schedule...
Oh well - we had tons accomplished before 10am....amazing :D

Foods for today:

B: We finished the pancakes from the other day with 100% maple syrup (not HFCS) & banana for breakie with coffee
L: For lunch it was Greek pasta salad - deeelish
Then it was time to workout number 1:
E1: Walking 50 mins!
Then we got home and it was time for some snack:
S:
Then we did more exercise:
E2: Walking 40 mins
Dinner was juicing tonight:
D: Fresh vegetable juice (apple, carrot, cucumber, celery, orange, lemon, spinach)

Sounds like a delicious meal plan, Justina! If I had a juicer I would think seriously about replacing my dinners with a juice.

delicious indeed! Juicers our actually pretty reasonably priced. We paid $35 for ours. We have been using it since October A LOT!! still working!

Good day today again!! Hubby was home - day off - yay!
We didn't get up to much. We made some burritos from scratch - they were soo good!
Oh...I had something naughty. I had dairy free coconut ice cream - it was divine!!!
It was really stormy-rainy here today - so we were pretty much stuck inside.
However, we did go to the gym!! I am so proud :D i did an hour on the elliptical!! Go me!
For dinner it was fresh veggie juice - yumyum!
Now I am just finishing off my day with a nice cup Pau d'Arco tea.

One more week until my course start with Duke. Exciting!

Well first we just wanted to have juicing as pre-dinner vitamin boost...but then we were not hungry...so yeah - it pretty much keeps me satisfied :) Mind you the day of juicing I usually have a slightly bigger portion lunch!

You have me looking at cheaper juicers. I've already switched my eating so that my biggest 2 meals are breakfast and lunch. My dinners are smallish now. A juice dinner occasionally would make sense to me.

BTW, great job hitting the gym!
 
Justina, I also live in a rural environment and it can be difficult. Luckily I have always had my own car to get where I needed to go and currently have access to fitness classes through my university. I have always found that walking and hiking in an area such as mine is enjoyable exercise. Have you ever tried hiking? I live in the mountains so there are a lot of trails at my disposal.

Congratulations on your goals and thank you for being so candid in your journey. I have an ironic situation in that I am a fitness and health professional, however, I myself have weight to lose and have joined this forum for support. Your goals are amazing and I know you will get there.

I am currently studying Holistic Nutrition and would like to offer some assistance if you will accept it. I love that you have nothing processed in your meals, and I, too, don't care for counting calories. You have great natural carbs going on. It does appear from your entry that you may not be consuming enough protein? I see the tuna in your lunch which looks amazing by the way, but not much in your breakfast or dinner - nut butters, eggs, poultry, and even beans are great additions especially when you are exercising. Keep the posts coming please!
