Carbs, without exercise, turns to fat. It also makes us retain water. Apart from the carbs that we deliberately consume, there are so many hidden starches/sugar in the food that we eat, even in fruits, down to the seasoning and sauces. This affects our weight readings.
When I went low carb, I found that I became less sluggish, more alert....but also I've been getting less sleep causing dark undereye circles
And even right around my monthly, I had no water retention at all, my weight was the same. (not that you have to worry about the monthly bloat haha)
