I love cooking in cast iron!
I have Losge and Le Cruset, I just use them for different things.

a little misdirection on the captioning... that pic is really the socca. very easy to make.

1. crank the oven up the 450° and throw in the CI skillet.
2. while that's going on, mix equal parts flour and water (for two like the one in the pan pictured use 1 cup flour/ 1 cup water).
3. throw in a splash or two of olive oil and a bit of salt, whisk it all together and wait for the oven to get to temp.
4. when that happens, reset the over to broil with the top rack about 6 inches below the heat.
5. put a splash of olive oil in the hot skillet and then pour in a thin layer of the batter about like you were making a large pancake.
6. broil for ~8 minutes or until the edges get brown and crispy (varies a bit depending on how much you poured in).

i had some still warm with a little marmalade on top as a little sweet snack to end the day... mmmmmmmm.

by the way, i would wager to say that without a properly seasoned CI skillet, that dish might have turned out to be a mass of burnt flour stuck to the pan whereas i was pleasantly surprised it literally slid right out when it was done... just like those 2am commercial frying pans with the miracle surfaces that god-knows what goes into (or comes off of...!). it's elementary... everyone needs a little Fe in their diet ... :)

Yup, a well seasoned CI skillet is damn near cooking perfection!
My partner is a chef and we're pretty particular when it comes to cookware lol!

The meal sounds delicious!
 
i found a foolproof way to stick with an intermittent fasting diet... just have a plumbing crisis every day. it's 6pm and i'm just now getting around to having breakfast. amazingly it's the first home repair i've made in quite a while that hasn't taken a 2nd or 3rd Home Depot trip... one and done this time!

an update on the cast iron skillet... yesterday i only cooked a couple eggs (4w, 2y) .... i usually start with bacon, but not this time. without even touching them much, in a few minutes they slid out of the pan like it was teflon coated. i think i have a keeper.

We have one CI griddle that lives on our stove (that IS it's home) lol
We use it almost every day and not much sticks to it.

The others need some fat added.
 
Happy Ides of April Eve... everyone got their taxes done?

going on about 6 months of pretty much sticking to a 24.5 BMI. after i have good days or after i have bad days, i step on the scale and i haven't seen a number outside a +/- 3lb range this year. still sticking to an intermittent fasting schedule; a 6-8 hour eating window is what i call a good day... i don't get stressed when it doesn't work out, though, so i do have days when my fasting window is as little as 10-12 hours... not often, but maybe 3 or 4 days a month. at this point i believe i could even recover from a few days/ weekend of indulgence.

probably the best thing i've become used to by intermittent fasting is realizing that hunger isn't something that always has to be addressed. the past few days i have been screwing up a bit by pushing my eating window way too late into the day, but to get back in sync i plan on skipping my eating window today and after a simple one day fast, i will reset tomorrow and get back on a better schedule.

my latest eating fad has been making bone marrow soup. sooooooooooooo good... next time i get stuff to make it, i'll post a few photos. basically just potatos, carrots and onions.

bummer of the year so far... the storms last month knocked out so much of our fishing pier, it has been closed with not a lot of information about when it will be repaired. i don't fish that much, but it is one of my favorite walks. shaped like a "T", if you walk the whole perimeter a single lap = 0.9 mile.

for weeks and longer i was seeing 174-176. this time of day.... the past few days i've been spring cleaning though and have been spending a lot more time running up and down stairs vs plunked down staring at a flat screen.... and my condo has 3 floors... :)

i've read that your VO2 actually goes up during a fast so i asked Google "is it ok to run a marathon while fasting", and besides the many comments that claimed it's not a great idea, there was one paragraph i do believe...

good advice from a smart lady! i've been on a daily intermittent fast (to lose i was doing a 20/4... now maintaining my 24.5 BMI with more like a 16/8 schedule) for 9 months now and have never felt this good for a long time ('cept for this friggin' vision!). i'd urge anyone to at least go 12 hrs/ day.
 
light reading for the weekend (0.88" thick, double side printed) ... i'm betting my heart rate will at least get up there at times... :)

one thing i didn't think about... i hadn't been in a pool or the ocean in over 10 months and ~55 lbs ago. when packing, i threw in an old suit without thinking and yesterday it was almost comical. pulling the waist band/ cord as snug as it would go, i couldn't take two steps without the shorts winding up around my ankles. a quick trip to a store close-by the hotel, and i wound up buying a size 34 waist .... ~8-9 inches smaller than my old suit.

on a positive clothing note... a club i belong to gets T-shirts every year. S-M-L --> $10 but XL, XXL, XXXL --> $15. :)
 
actually my first impression when seeing the bridge wasn't how they built it back up out in Arizona, but how the heck they disassembled such an intricate piece of stonework... you can probably see it's not just one stone piled on top of another. ... remarkable.

interesting newly discovered side effect of weight loss i noticed on this first long drive in many months.... after two hours, my now more bony butt could not find a comfortable position to sit. i see seat cushion shopping in my future for sure!
