You have a set yourself up for success in my opinion with tracking your intake and making a diary.
My girlfriend and I joined a gym ourselves and could only do a minute or so on a cross trainer and in 6 week we did 20 minutes of intervals.
You have been given some very sound advice in getting in rest days (I sure have trouble getting in more than one day a week)
We really like getting on a cross trainer or elliptical and doing interval training we started with 5 seconds as hard as we could go then 45 seconds recovery we are doing 15 seconds hard and 15 second recovery now we do this for 10 minutes then take a 3 minute break and do another 10 minutes.
We are working with a trainer 2 days a week we started at ½ hr sessions and are now at 1 hr sessions and have started weight training for a power lifting competition next July.
This can be done and you will really start feeling great quickly.
