Very relieved...you have no idea!

OMG, you all have to try this...

Chicken Salsa Soup
2 cups water
6 ounces skinless chicken breast, chopped into small pieces
1 cup chicken broth, low-sodium
½ cup cooked brown rice
1 cup fresh salsa
1 teaspoon olive oil
Jalapeno pepper, minced
½ teaspoon salt
Dash of pepper
6 medium garlic cloves, chopped

Add all ingredients except garlic to medium pot and heat, over medium, for 30 minutes. Reduce heat, add the garlic, and simmer over low heat for an additional 15 minutes. Serve hot.

I don't know what's going on...I'ved lost another pound. That's 2.5 this week, and I missed 3 days of exercise! I've also eaten Halloween treats all week:eek:

Bad me! Went out of town yesterday. I talked my friend out of going to McDonald's (ick) and going to Pizza Hut, so I could have my favorite pasta. Used most of my calories for supper with the fettucini alfredo :eek: and cheese toast, but it was so worth it. And we missed lunch because of shopping. :rolleyes:

I went to the grocery store and got everything I need to make it except the low sodium chicken broth, now I've got to go back out. I'm really excited. Can't wait to report back! :D

Hey DQ, I'm cooking that Chicken Salsa soup right now, I can't wait 'til its done! I'm bummed that the first rinky dink grocery store that I went to didn't have fresh salsa and I was forced to get the kind in the jar. I was too lazy to go one shopping center over to the real grocery store, I hope it tastes ok! *prays*
 
CHICKEN SALSA SOUP...SO DELISH!! 5 gold stars for DQ! I love it, my daughter loves it! I'll be taking this for lunch tomorrow...if my daughter doesn't eat it all tonight! :p
