Chicken Salsa Soup
2 cups water
6 ounces skinless chicken breast, chopped into small pieces
1 cup chicken broth, low-sodium
½ cup cooked brown rice
1 cup fresh salsa
1 teaspoon olive oil
Jalapeno pepper, minced
½ teaspoon salt
Dash of pepper
6 medium garlic cloves, chopped
Add all ingredients except garlic to medium pot and heat, over medium, for 30 minutes. Reduce heat, add the garlic, and simmer over low heat for an additional 15 minutes. Serve hot.
