Hi, Ava, you're doing great! I just have to worn you about eating too few calories (700 is too low). If it is one day out of many, its ok, but don't do it too many days in a row, because your body will go into starving mode and will hang on to each calorie, and store it as fat, so it will be more difficult to loose later. When I started out, I did 1000 calories for 2-3 weeks. I lost 4 lbs in 1 month (which is a lot for me), but then I hit a huge plato and was barely loosing anything at all.
I think organic foods and not-processed foods are not exactly the same. I think organic are foods that do not have artificial ingredients or perservatives. Non-processed foods are foods that occur naturally. For example, most cold ready to eat cereals are processed foods, but they may be either organic or non-organic depending on the ingredients.
So, I think eating organic will be easier then eating non-processed, because organic foods have same things we are used to eating, just from more natural ingredients, and without pesticides. Either way, you will have benefit to your health, that's for sure, and good idea on gradual adjustment! It will make transition much easier and set you up for success!
