Listening to Moby Dick -- now that's a challenge! I read the book twice, but I couldn't imagine listening to it. No wonder you want it to be over.
 
i'd leave the cukes out of the couscous and make a cucumber, tomato and onion salad (red onions make a nice sweet addition( with a simple vinagrette dressing.. )
 
I can't get the rest of my family to eat cukes by themselves...I'll look in the fruit bowl to see what I have...

Oh man - it is SO good - so much so I ended up having 2 ;)
I love those tortillas!
 
OK - for vegies I have an egglplant, butternut squash, yam, red bell pepper, broccoli, carrots, cukes, toms, onions.

The couscous is the Near East kind that comes with pine nuts - I plan on adding the cranberries and cukes to it and let the little people in this house pick out what they don't like.

BTW, does the Near East count as "processed"?
 
Your dinner is sounding wonderful!!! It's probebly a good thing I don't live closer as I would be in your doorstep "dropping by" around dinner time;) Hope your having a wonderful weekend!

That's great you're introducing your kids to all kinds of veggies. That will really help them later on in life. Your diet looks terrific!
