The bf and I are making a healthy take on stew and dumplings tonight, hopefully the dumplings will work still when we replace the uber calorific suet with light spread :S ... I'm not holding out too much hope - fingers crossed.
Let me know how they turn out. I love dumplings and have wondered if it would work with low fat spread.
 
They were actually pretty good!

I used 150g plain flour flour, 1 tsp baking powder, 75 flora light spread, dried thyme, onion powder, garlic powder and a little water.

They were fluffy when you cut into them but a little chewy/doughy once you were eating them lol, but nice still.

We had stewed apples and a scoop of vanilla icecream for pudding <3 yummm...

The meal was pretty heavy cal wise but I was still under 1800kcal for the day.

Anyway, that's all for today :)
 
50 mins cycling and 10 minutes wii boxing.

I'm going to my mum's for the night tomorrow and I probably won't do any exercise. So that means I'll have only done 5.5hrs exercise this week, which is way less than I was aiming for (8hrs) but I still did 3 hours more than my weekly minimum - so depends which way I look at it.

I'll just try to improve on 5.5hrs next week. I hope I'm not letting my team down too much :(

That sounds great. I'll definitely be trying that when the weather cools down a bit. My two weaknesses are dumplings and pastry so I've been avoiding them both like the plague :)
I haven't done very well on the exercise either this week. I've given myself this week to have a bit of a rest and get back to harder exercise next week.

I've had a crap day today. Eaten really badly :( choccy biscuits, pork pie and cake to name a few offenders.

I'm assuming tomorrow won't be so great either cause I'm staying here at my mum's until tomorrow evening.

I guess I can justify it with 17 days of good work but I still feel kinda guilty and itching to make up for it next week with exercise. I want this to be a permanent change in my life though and going home, somewhere where I don't have too much choice in what I eat, is just a part of life.
 
Don't worry about it. Like you say this is a lifetime change and we are going to have occasions like this all our lives.
I'm not a chocolate biscuit lover but pork pies are well worth every single calorie :D
Just get straight back onboard on Monday and you'll be fine. I wouldn't mind betting that you haven't indulged anywhere near as much as you would have done in the past.
 
Yeah to be honest today was much better than yesterday and yesterday wasn't really that bad.

I've done 5 minutes of my 10 minutes of squats so far and I'm drinking a load of water in the hope of losing anything gained via water weight in time for tomorrow morning weigh in - ha I know it's a bit of a vain attempt but you never know!

I'm going to aim for an hour minimum work out tomorrow and I might try to eat lower calories (1500kcal) for a few days to make up for the weekend.

2 hours tennis! Well done me and the bf :) It was really fun too. I cut down my calories a little today aswell: 1600kcal rather than 1800kcal.

All's well and hopefully I'll lose this water weight soon.

Two hours of exercise today and just under 1800kcal. I'd like the calories to be a bit lower but never mind, still a good day :)
 
I only did 5 minutes squats yesterday and forgot to do the other 5 minutes so no mini challenge points to me and I haven't done any today either 'cause... well ... I'm being lazy.

I only did 30 mins cycling today too but I did do two and a half hours tennis etc yesterday so I think it's still been a good week overall.

Also, I finally shed the weight I gained from my weekend off at my mum's house. Hopefully I can lose 4lbs by September and meet my goal of being under 182lbs. It might be a bit of a push but we'll see!

I'm going to make some sticky chicken and egg fried rice now. Yummmersss!

I have to say that counting calories is SO much easier when you have yummy low fat/low cal recipes to hand.

I bought a load of BBC good food '101' recipe books recently and decided that tonight I would try something I hadn't done before. I made chicken in a 'sticky sauce' but it turned out more like sweet and sour sauce, with egg fried rice. It was absolutely delicious, like a good take away almost AND it worked out as 700kcal including the rice.

I'm really enjoying getting fitter (particularly playing tennis!!) and finding ways to make dinners not only healthier but tastier and more interesting too. I hope and expect that these positive feelings will help me make this a permanent change in the long run.

However... I'm a little worried that once I'm back at University and in placement I won't have the time or energy to keep up my cooking and exercising with the same gusto. I suppose that's just part of the challenge though!

Oops, not a great day yesterday. I only had about 1500kcal and about 300 of those were from alcohol lol.

I'm gonna make more of an effort to eat well this week. I'm going to try to replace my chocolately snacks with more fruit and veg.

I'm not really losing as fast as I'd like either. I'm back to 186lbs but I was the same weight a week ago. I think I'm gonna have to reduce my calories now, definitely.
 
Oops so obviously today is a maintanence day ... I've had about 1900kcal today, including KFC :S Not great but at least it's not enough that I'm gonna put anything on (I hope ... though there will probably be reprocussions for all the salt I've had today)...

Plus I haven't done any exercise yet. Boo :(

I am thinking of officially and finally dropping my calories down to 1600kcal this week so maybe it's good to have a maintenance day before the drop. Or at least that's what I'm gonna tell myself.

What did you have? I'm only curious because I have been seeing the commercials for boneless chicken bites and they look sooo good!! Everytime I drive by I think of them. One day I'll have to check them out and hopefully they will taste like dirt so I never think about them again!!

You know the funny thing about me and KFC chubby girl? I used to hate it! When I was little my mother had a zero tolerance to fast food so when I first ate KFC when I was about 13 (with my corrupted friends lol)... well, I was really sick! I suppose it was cause I wasn't used to such rich food.

Anyway, it kinda put me off ever since (I'm not a big fan of the other fast food chains either because of the same reason) BUT a few months ago my bf said he had a big craving for KFC and I had to give it another go just so he could have some, ha!

I begrudgingly agreed and had some of the boneless chicken fillets and omg I was hooked. I swear we ate KFC like 4 times in two weeks.

It annoys me 'cause I should have just left myself not liking it! It's not like I need another junk food to crave :rolleyes: but I still have the attitude that no change in eating habits should involve never enjoying the food you like ever again.

So yeah back to your question - yesterday we had a boneless box thingymabob. And it was yummy. And weirdly, I'd lost a pound this morning??? Who knows how that works!

In other news, today I'm getting this red lump removed from my leg that I've had for years. They're going to freeze it off and I don't know whether I'll be able to play tennis this afternoon 'cause of that, I'll just have to ask them!

I hope I will be able to though 'cause I did nothing yesterday and I don't want to get into the habit of putting off exercise.

OK so that's the end of my long ranting post for now :)
