Trying one of those "one-pot-pasta" recipes tonight. Tomato and Artichoke Puttanesca. And I got to use my fresh oregano from my balcony garden. Delish! Definitely going to make it again!

But my brother is driving me crazy... Asking me to buy him food because he is poor and has no job... I have already bought him a mountain of food! There is a bag of fresh crusty bread rolls, endless pasta, rice, bolognese sauces, frozen stews, soups, beans, chickpeas, veggies, fruit, lentils, wraps, bread, cereal and more. Gaahhh! At least he loved the pasta tonight.

On a happier note, I had another job interview today. God I hope I get it! The job sounds great and its in a massive international company. Going on to the third interview stage! Not the highest pay of all of them, but best company, most interesting job and the most growth potential. My feet are killing me though! Walking through the city in heels in the heat. I'm out of practice!

Todays Challenges:
Tonight I am going out to a singles valentines party. Free booze and canapés all night. I am going to let myself have 2 low carb beers and no canapes (I'll eat beforehand). Ive done my research and can allow myself 2 bottles of Hahn Super Dry, Pure Blonde or (as a slightly higher calorie third choice) Carlton Dry. I havent really seen many of the other low carb brands readily available at event or pubs. If they have NONE of those... Then I'll have ONE high-carb beer and a small canape instead of two low-carb beers.

I was so hung over after having a single glass of red wine the other day that I'd rather not drink much.
I'll update this diary tomorrow with my final days diet.

Todays Wins:
Woo! I fit back into one of my smaller shirts and it looks great and fits just like it did when I bought it! It was so tight when I got back... Proof my rather strict diet is working. Only one of my outfits doesn't fit now; a ridiculously small jumpsuit that is closer to an AU size 6 (US size 2), rather than 8 (US size 4). Looking forward to hitting my goals and increasing my calories again.

Gotta keep this up until my bothers 21st... I think I might weigh myself on the date of my birthday party in 3 weeks time. I set up my scales last night in preparation of that day. Hoping my jumpsuit will fit by then and I'll be close to my previous weight.

Breakfast:
Cornflakes - 110kcal
Milk - 50kcal

Lunch:
Full Tub Cheese and Onion Cottage Cheese - 180kcal
3x Rice Cakes - 90kcal

Well... At least I'll never have to worry about finding a date... I've never been asked for my number so many times in a night!! Felt a little ill this morning though... Ate a bit more than I'd intended so made sure I did some exercise.

I bought new herbs and veggies! I've built myself a tiered garden. Planted 3 lettuce plants, a Thai Chilli plant, Sage, Rosemary and chives. Next I'll have to buy a smaller pot to add a higher tier and plant a dwarf tomato plant. In the meantime I'm regrowing onions on my windowsill. In another 2 weeks or so I will be able to plant 2 more red onions.

The Sage was delicious! Made a butternut pumpkin pizza with baked sage on it... Going to have to make that again! Might try a pasta tomorrow that uses similar ingredients.

My brothers friend killed my pot plants with over watering during the two months I was in Germany... I brought back one of them from the dead... But the other is beyond saving! I'm going to find something else to plant in its pot. I'm regrowing a few plants from scraps at the moment so I'm either going to plant a sweet potato vine or an avocado tree. I'm loving having constant access to fresh herbs and veggies. However lettuce grows so quickly and I have waayy too much in the fridge.

Currently I need to use up:
- Lettuce
- Tomato
- Basil
- Pumpkin
- Bok Choy

Tomato, Basil, lettuce and balsamic vinegar salad?
Sesame oil roasted pumpkin cubes with garlicky wilted bok choy?

The other stuff shouldn't be too much of a hurry. This is pushing me to try new recipes, new food combinations and explore new flavours.

I've never eaten leeks before. They're amazing!! I'm going to be eating more of these I think! AND home-made pizza bases are the BEST way to eat pizza! Sooo good! I'm definitely going to grow more leeks! They also grow so fast! :D

Breakfast:
Cornflakes - 110kcal
Milk - 50kcal

Lunch:
Leek and Mushroom Pizza - 265kcal:

Oooh maybe tomato basil soup? I bet there's some good vegan recipes out there if you wanted to try a creamy tomato basil soup ... Soup is great to freeze too for lunches during the week :p

I'm a bit worried about my parents arriving in two days... I find my parents encourage me to overeat ALL THE TIME. My brother and I lost so much weight when I moved out all those years ago. I know my mother doesn't intentionally sabotage my diet... But she makes me feel very guilty for not eating the bad stuff or large helpings of the stuff. She wants to help and be supportive.. But she ends up being the complete opposite! And I know she feels some guilt about eating bad stuff so when other people join her she doesn't feel as bad. There's a lot of ambivalence here.

I do feel sorry for her because I know she hates being over weight and secretly compares herself to my dad who is really skinny!

Ah god weight and self-esteem issues run deep in my family... Don't even get me started on my brother.

Managed to score another job interview Wednesday. So many interviews coming up!

Mmm! That sounds amazing! (And really useful) I will have to look up a few good recipes!!

At least I can say Im getting my 5 servings of veggies every day! Trying to find more ways to use up all the spare veggies I have!! Feels like they're just multiplying and taking up all the space in the fridge!

On an unhealthy note:
Planning and preparing a breakfast feast for my parents when they arrive tomorrow! Mini strawberry pancake stacks with chocolate sauce and choc-dipped strawberries, smoked Salmon egg boats, feta bell peppers, ham, feta cubes, crusty bread rolls, balsamic tomatoes, rosemary roast potatoes, fruit salad, and a whole menu of gourmet hot chocolates! I know this may really bore people... But I LOVE gardening!! Growing things from seeds or kitchen scraps is so rewarding! And then getting to eat it is such a great reward on its own. My sweet potato has started sprouting!! Tiny purple shoots have appeared 3 days after I stuck it in water!! Also just planted some Thyme and Cherry Tomatoes! Added another tier to my garden and an adorable mini trellis with some ornamental details at the top.

I'm going to replace one of the plants my brothers friend almost killed with over-watering. Im going to plant my sweet potatoes in the pot. It's now infested with ants, is brown, dead-looking (though has a few new shoots now that I have been nursing it back to health) and a few deadly redback spiders (one of Australia's deadliest) have set up home and laid egg-sacks everywhere!!!:eek: I trimmed back that plant! Had my hands among the leaves! I have NO IDEA how I didn't get bitten...:eek::eek::eek::eek::eek:

Anyways. Breakfast for the family looked and smelt amazing! I ate healthy though so was quite proud of myself! The egg boat was super popular.

I'm still trying to work my way through all the pumpkin pasta I made!

Ok so I'm back! Parents have left (was another complete disaster diet-wise...).

Yesterday I bought a few select meals from Jenny Craig because they helped me so much (and took so much effort out of the diet).
But I will still be eating a decent amount of my own food. However they gave me too much so I will be eating most of my meals from them this week which sucks :(

I will recored the calories, but wont get too stressed about it all. I'm really struggling getting motivated one last time...This is the 6th time I have drastically changed my diet and eating-attitude in the last few months...

In three months, as of today I will weigh myself!

My new job also helps me do more walking during the day which is good!

Muesli - 180
Milk - 25kcal

Veggie Tortellini - 240kcal

Ancient Grain Risotto - 350

1/2 Cup Soy Milk (for coffee!) - 50kcal
Carrot - 30kcal
Tub Cottage Cheese - 180kcal

Total: 1055kcal

Mmmm I've been REALLY struggling to get back into the diet for the third time... Its so emotionally tough changing everything one more time. This is the third week I've tried to start again. Determined to make it this time.

I've finally got a new job! This is week 3! Woo!!! :D And there's a gym about a 12min walk from my job and 5min from the station which is perfect!

I started on the Jenny Craig food plan again, but Im only having lunches and some dinners. Hopefully it helps!

Breakfast:
Corn Flakes - 128
Milk - 45

Lunch:
Pearl Couscous Salad - 265

Dinner:
Mac and Cheese - 283

Snacks:
1 Cup Soy Milk - 95kcal
Cheese and Crackers - 190kcal

Exercise:
65min Elliptical - 450kcal

Total:
1006/1550 = 544kcal
544 + 450kcal = 994kcal

Net Total = 994kcal

It's tough to find motivation, that's for sure. Just focus on some little changes and before you know it you'll find yourself with some healthier habits.

It's tough to find motivation, that's for sure. Just focus on some little changes and before you know it you'll find yourself with some healthier habits.

It is... I've started doing gym and it seems to be keeping me on track; I hate pretty much any form of exercise so I don't want to make the effort I put into it redundant.

The pre-prepared meals are making life so much easier! I have tried to burn 450kcal each time I hit the gym too. Been really hungry with the exercise though so I've been eating a bit more too. Guess the weekend will be the biggest test. I was doing so good all week, till the weekend happened and it all fell apart.

Moderation is also pretty tough. I find I have no motivation unless I'm going all out! :S Same with everything I do... Maintenance is going to be my biggest challenge because Im just not moderate. If I'm not tracking everything... Then I just cant bring myself to care.

24/3/15
Total Calories:
1020/1550 = 530kcal
530 + 450kcal = 980kcal

25/3/15
Total Calories:
1195/1550 = 355kcal
355 + 450 (gym) + 100 (walking) = 905kcal

Net Total = 980 + 994 + 905 = 2879kcal

Not too shabby! Hopefully tracking my calories and the contribution of the exercise will help me! :)

Well I bought a Fitbit! Such an awesome thing! Tracking food, exercise, steps and calories burned has never been easier!

I've stuck closely to my food goals and tried to be more active (been walking EVERYWHERE) and going to gym regularly.

Turns out the motivation I really needed was to weigh myself... Uughh I'm exactly where I expected... But it was surprisingly quite a relief to know I wasn't more than I thought I was. And I'm STILL in the healthy weight range! BMI < 25! Woo!

But still weigh more than I should... :( I'm so ashamed of myself... I don't even feel comfortable posting my weight here! Which I know is silly. We are our own worst enemy. Might post it tomorrow if I'm feeling up to it.
