Carrots:

Easy way to make carrots taste like a wonderful side dish!

Peel carrots. Slice carrots into coins. Boil or steam until soft. Add a teaspoon of butter and sprinkle with a bit of brown sugar. Makes them taste like sweet potato or butternut squash.
 
Garlic Dill red potatoes. My favorite summer side dish.

Take a bag of new red potatoes (the tiny ones). Peel a strip of the peel off the middle (around it like a belt, leaving peel at top and bottom). Boil until a fork pokes in easily. Drain. Add 3 T. Minced garlic and a handful of FRESH dill. Sprinkle with salt and pepper to taste.
 
Spicy Turkey Chili

Brown 2 lbs lean ground turkey with 1/2 c. chopped onion. Add to a saucepan filled with:
1 small package william's chili seasoning
2 cans red kidney beans, drained and rinsed
2 cans rotel
1 can tomato sauce (not paste)
12 oz. water

Simmer 20 minutes or longer. Serve with crackers, tortillas, fat free sour cream, olives, cheese, bread, basically anything you want.
 
Southwestern Chicken Pasta:
Cook any pasta you like, I prefer angel hair. Drain.

In a skillet, saute 2 diced chicken breats with a sprinkle of garlic, chili powder, oregano, black pepper. When cooked through, add a can of rotel, 4 oz. water, 1/4 c. chopped onion and 1 c. of diced peppers (I use green, red and yellow, but you can use just green). Simmer until veggies are tender.

Serve over pasta with a sprinkle of diced avocado and a sprinkle of cheese, if desired. (You can also substitute 1 can of diced tomatoes and 1 can of diced green chili if Rotel is too spicy for you.)
 
Enchilada rice

12 oz. cooked ground turkey
1 pkg. enchilada seasoning mix
1/3 c. chopped diced onion
1 tsp. minced garlic
1/2 tsp. salt
1 (3 oz.) can green chilis
1 can chopped tomatoes
2 c. cooked rice
4 oz. shredded cheese
1 c. tomato juice

Brown meat, add onion, garlic and tomato juice. Add season mix, chilis and tomatoes. Heat and add cooked rice. Placing in 9x13 inch pan, top with cheese and bake at 350 degrees for 20-30 minutes. Serve with salsa, sour cream and lettuce.
 
Alright, there you go, a few of my favorites! I will give you more sometime, but I didn't want you to have to wade through my whole cookbook! I gave you the most simple, fool-proof ones I have that are still reasonably healthy. I hope you enjoy them, my dear Elle. Now, go cook something for that awesome man of yours!

P.S. I also hate fish (well, seafood of all kinds) so they will never appear in my recipes.
 
Oh, and this is my Japanese Chicken that I posted in the recipes section a few weeks ago. It is incredible!

Japanese Chicken:
1 whole fryer chicken, cut up (or 6-8 pieces of choice, I use thighs)
1 cup low-sodium soy sauce
1 t. ground ginger (or two inches of grated ginger root, but who has that?)
2 cloves garlic, minced (or 1t. ground garlic)
1 T. sugar

Heat soy sauce, ginger, garlic and sugar to a boil. Pour over chicken. Bake at 450 for 15 minutes, and 375 for 45 minutes after that, basting chicken with sauce every 15 minutes.

Goes GREAT with steamed cabbage and carrots. You can also serve white or brown rice, if desired.
 
Hi girls! Thanks for stopping by the past few days!!!

So the crazy bitch finally paid me my money. After sending her a few text messages and her not responding this past week, she called me yesterday. Said she had my money and wanted to know if she could stop by. She came over, paid me the cash and I of course felt the need to be nice and invite her to make some christmas cards. We made cards and talked but she's definitely not the same girl that I met five years ago. I doubt we'll talk anytime soon but I'm glad to have my money. :p

Now for the bad news...
Today my dog had a seizure. :cry: She hasn't had one in about 2 years, so when it happened I was completely shocked. It wasn't nearly as bad as they used to be though. I'm glad my mom was home when it happened because I wasn't ready for it and needed some help. I was almost in tears and was shaking like a leaf. I had to calm myself because I didn't want Kami (my dog) to sense that I was afraid. I gently carried her off of the bed, onto the floor, wrapped her up in a blanket, just braced her and let her seize. After the seizure was done and she was just shaking I gave her some vanilla ice cream to bring her blood sugar back up. Thank the freakin lord we had ice cream cake in the freezer from my mom's bday. Otherwise, I'm sure it could have been worse.

I can't even begin to explain how I felt today seeing my dog have the seizure. She used to have them a couple times a month, every six months or so. We had taken her to the vet and got all sorts of tests done on her and they said they all came back fine. They sad she'd hopefully grow out of them and we thought she did, up until today. I'm just really hoping that this was a one time thing. Granted, this one was very mild and only lasted about 15 mins (from start of the seizing to the end where she just shakes) but I can't take seeing her like that. If she has another one anytime soon, I'm going to have to take her to the vet and have them run the tests again and possibly get a brain scan done, which is going to cost hundreds of dollars :/. But for now, I'm just going to keep an eye on her and block the stairs when we're not home. I really hope this was just a random one... I can't stand to see her like that.


I finally shit the other night after I took the laxative. Let's just say it was not pretty. I was in and out of the bathroom three times in 30 minutes. :ack2:

Yesterday I was 180 and today I'm 180.5. Only 1.5 up from my lowest of 179. Not too shabby. :] Gotta update my challenge stats. I completely forgot to the other day and I'm just getting to it today because of the nubbers (my dog) having the seizure.

Alright, I'm gonna go do that, check out what yummy recipe amber left me :] and go visit your diaries. Hope everyone is having a way better day than me! lol.

^^^Finally! Someone who doesn't like fish/seafood! I dont eat anything that once lived in the water.... I don't even eat fish sticks. :p Once in awhile I'll eat tuna fish from the can but it's like once a year. lol.

And, can I just say that I am definitely drooling right now from all of those?!?! :drool5: lol.

They all sounds super yummy and I can't wait to try them!!!!!!!! Now, I just need to choose which one to try first!

Holy crap... for a minute there, I had to make sure I wasn't at the FoodNetwork Forum. Sheesh, Amber! hahaaa! Btw.. everything looks delicious. I'm actually making Chinese chicken broccoli for Sean tonight. One of his faves as well. (Made with chicken breast, but with a little bit of red pepper to add to the fun. Yummm)

That is so sad about your poor pooch. I hope that was a rare occurance. Can dogs be epileptics? I think humans with that tend to have more seizures when they're younger, and fewer as adults--not sure on that, though.

And you're definitely right, dogs can indeed be epileptic. The vet said that since her seizures weren't always constant that she most likely didn't have it, but who knows. So we're not quite sure what causes them but I did a ton of reading when she first started having them and I guess cocker spaniels (she's half pug and half cocker) are 2-5% more likely to have seizures over any other breed. Adn there's also a disease called PDE that pugs get that involves seizures. I'm just hoping that they're the seizures that have no real cause and that she doesn't have a tumor or PDE or anything of the like. :(
She's fine now though, just snoozing away on the sofa. lol.
 
For dinner I just had a boca burger (yum!) and three freakin cups of broccoli stir fry. haha! I didn't read the bonus until later on in the day today and I didn't want to miss out on getting points for it so I mowed on some veggies.

Also, I think that David and I might buy a laptop on black friday. I was looking at the ads online and I guess there's gonna be some pretty good deals. Sure the lines will be hella long and who knows if we'll even snag one, but it's worth a try!

Alright, I'm off. I gotta go make some more christmas cards. :]

I am sorry about your puppy. Seizures must be in the air, as a student in my class collapsed with one Friday, also. It is scary!

While looking online at black friday ads, I decided to go to the walmart site and check out their weekly ad. I was just looking at it and saw it didn't have much of anything spectacular, my mouse hovered over soup. The caption that popped up made me laugh. lol.

Back to a flat 180 today, yipee!

Ate my 3c of veggies today with lunch. boca burger and mixed veggies. I've been craving boca burgers for awhile so I've been indulging lately. They're actually better than a beef burger... Only 90 cals, 4 carbs and 3 fiber. :] And honestly, I like the taste better. I think that's the only thing that I still eat regularly from when I was vegetarian years ago.

Just popping in, can't stay for awhile. David and I, both are pretty tired so I think we're gonna snuggle and watch a movie together. :D

Hope everyone had a great Sunday! I'll catch up with all the diaries tomorrow :]
