Time to get back in check

Well today was my excess day. I went over my total allotment of calories by a bunch and you know what, I'm not even worried about it. I'm on vacation and I gave myself this leave from my diet so I'm ok with how I've eaten up until this point. Tomorrow is the day I get back on the hardcore exercise wagon and really whip myself back into shape. I'm thinking of going for a quick jog early in the morning. Then doing a bit of my workout video and finally jumping some rope. That should be enough to shake my body out of the little vacation I had given it.

My weight loss seems to be progressing quite nicely. I weighed in early this morning just to make sure that I hadn't gained back some of the weight I'd lost with all the indulging in beer that I've been doing lately. Strangely enough, I came in at 180lbs and after getting back from a music concert tonight, I jumped on the scale again, and with all of my clothes on and my shoes, I came in at 185lbs. I'm not sure what to think. Is it possible to have lost 5lbs in 2 days?? I know that for the past 2 days I had been undereating a lot, but 5lbs...now that's just crazy. Let me not dwell on it too much, and just focus on attaining my current mini goal which is to be at 180lbs by the end of March.

Have you been drinking enough water? It's possible to lose a lot of water weight if you're doing lots of exercise and not getting enough fluids. Let's hope that's not that case. We all need our H20!
 
Good day all

I've been getting in around 8 cups of water a day...not much I know, I'm working on increasing that today. But it probably is water weight. I had one glass of beer yesterday night, so maybe I was a bit dehydrated from that. Happy equinox day to you too. I didn't know that there was such a thing as equinox day. I learn something new every day. I worked out today. Did 30 minutes of my cardio boot camp video and then a measly 5 minutes of jump rope. That rope jumping kicked my butt. I was breathing heavy before I knew it. I like that feeling. I'm going to incorporate more of it into my exercise program. Unfortunately, I didn't get to go running today. I woke up too late oh well all of the other exercising I did should make up for it.

Get this, I even got a chance to do a bit of resistance training "broke man's style". My mom has this store of clorox bleach, the big kinds that she keeps in the laundry room, so I found myself lifting those and working out the old biceps and triceps. They weighed around 15lbs each, which is equal to what I've been weight training with when I use the dumbells. It was fun, cheap, but fun. I'm doing a heck of a lot better food wise today than I did yesterday. The caloric intake for last night...drum roll please 2,004. Yeah, I know, I know. I've learned my lesson, no more being bad.

Hopefully, all of the walking I did will make up for the poor food choices I made yesterday. But in my venturing off to the dark side, I did happen upon a good, healthy McDonald's food option. Folks, I'd like to introduce the snack wrap. They have two options, the crispy chicken snack wrap with either ranch or honey mustard dressing, or the grilled chicken snack wrap w/ ranch or honey mustard. I opted for two grilled chicken honey mustard wraps with both coming in at 260 calories each. Here's the break down for anyone that's interested.

Grilled Chicken Snack wrap w/ honey mustard

260 calories
9 total calories from fat
27 carbs
800mg of sodium
1 gram of fiber
4 grams of sugar
18 grams of protein

Grilled Chicken Snack wrap w/ ranch dressing

270 calories
10 total calories from fat
830mg of sodium
26 carbs
1 gram of fiber
2 grams of sugar
18 grams of protein

So that's the facts about this food choice. Not too shabby considering that it's coming from McDonalds, and it's an option outside of getting a salad. Plus at only $1.29, it's not too brutal on the old wallet. But, don't get overly crazy with this stuff, just like anything in life, we've got to take things in moderation. I don't want anyone sabotaging their diet. I'm just giving another alternative so that in case you're ever faced with having to get something from the dreaded drive thru, you'll at least be able to order wisely.

Boy am I tired. I've spent a good portion of my break asleep. I need to start making sure that I'm getting enough sleep from now on. Man, I want it to hurry up and be spring already. I'm tired of the lousy weather. Well, here's how the rest of my day has gone so far.

I haven't had much today. I've been sleeping my life away. I'm not too sure what I'll eat for dinner. Maybe I'll have fish sticks, or perhaps some Nigerian food. Not too sure. All I wanna do is go back to bed.
 
Nigerian food! That sounds interesting. I like Ethiopian food a lot...

Yep, I've decided I'll make some Nigerian food. Especially since I recently found out that my favorite dish is only 283 calories. Now I've just gotta motivate myself to go and make it.:D
 
Wow, nigerian food! I don't think I've ever tried that but I'm usually game for anything not classified as "american cuisine"...lol. I love cooking so you'll have to share some recipes, especially if they are healthy! Thanks for stopping by my diary today, I'll have to peek in here more often and see if your posting recipes *ahem...hint...*

I'm really eager to see this Nigerian recipe!! I've never tried Nigerian food, and I do love rice dishes. So I can't wait!
 
The recipe

As promised, here's the recipe for a nice low cal version of Nigerian Joloff rice. I tried my best to find healthy substitutes to some of the higher calorie options that are usually given. Plus I'm not sure how many servings you wanted to make, so I'm listing the food options for 2 servings. Oh and this stuff can get spicy, feel free to tweak the amount of spice that you add to the dish.

Joloff rice

1 cup uncooked rice (I suggest using either brown or wild rice)
~1 cup wild rice - 166 calories
~1 cup long grain brown rice - 216 calories
1 small onion - 29 calories
1 medium red bell pepper - 29 calories
1 medium tomato - 22 calories
1 cup chicken stock - 20 calories
1 teaspoon olive oil - 40 calories
1/2 chili pepper or 1/2 teaspoon ground chili (optional, use if you like it spicy)
Salt, thyme and curry powder to taste

Directions

Combine the 1 chopped tomatoe, the bell pepper, chili pepper and small onion and, working in batches, puree together in blender. Set aside.

Bring 1.5 cups of water to a boil, add rice. Let rice cook for 5 minutes, then drain a bit of the water out about half a cup of water should be drained. Then add chicken stock (1 cup) to cook rice. Add salt to taste. Cook on medium flame till rice is slightly softened, about 10 minutes.

While rice is cooking, pour tomato-pepper mixture into saucepan and add olive oil, salt, curry powder and thyme to taste. Pour sauce into rice, mix together and simmer until rice is fully cooked, about 10 minutes. Rice should be dry and fluffy when done. Makes 2 servings.

A bit of history, Joloff rice is the precurser to modern day Jumbalaya. Hope you guys like it, and don't forget to serve the rice with whatever salads, meats or vegetables you all want to enjoy with it. Tell me how it goes if you try and prepare it.
 
Happy birthday J!!!

Today is my baby brother's birthday. I don't call him my little brother since he's like 6'1. I call him little big man. He just turned 16. Wow, it's so weird. 16 years ago I was busy carrying him, changing his diaper and having him pee in my eye. How quickly time flies and how fast kids grow up. Well anyway, he wants us to go out to dinner for his birthday. That means hitting up his favorite Chinese buffet. My mom says that I should take a day off from my diet and enjoy myself. I say yeah I will, but I'm not going to overindulge.

I've got my menu pretty much figured out, and I plan on taking as much food as I can possibly sneak out back to school with me when I head on back Sunday. So I think it's a win, win situation. Today's pretty ok, I'm stuck in the house waiting for the repairman to come, and I've been up since 7:30 this morning and the dude hasn't shown up yet. Oh well, the waiting game continues.

March is almost over, and I've got some new mini goals set for myself. I would like to be at 160 by the time my graduation rolls around. That means I have 2 months and 5 days exactly to lose 20lbs. Is that possible?? Or am I pushing myself a bit too hard? Right now, I'm at 182lbs. I figure that by the end of next week, I should be at 180lbs so it is possible...maybe. We'll see where I'm at. Um, I've also discovered a new recipe. It's a chicken spinach wrap with wasabi dressing. It's super easy to make and takes about 15 minutes to whip up. I'll post up the recipe later today.
