beets, as long as they arent packed in vinegar, are really good.. you can get them out of of a can - which is convenient... or get them fresh from the produce section (some places, I've heard don't sell canned beets) wrap them in tin foil, and roast them in the oven for about an hour... the skins just peel off -- toss with some garlic and olive oil and they are deeeee-lishussss...
