Graupensuppe

bacon fat from 2 or 3 slices of bacon
1 cup barley
Chopped yellow onion
1 chopped and peeled medium potato
6 cups stock any kind
1⁄2 cup chopped celery
1⁄2 cup finely chopped leek
1⁄2 cup chopped carrot
2 sausages
Half to 1 tsp. marjoram
salt and pepper and nutmeg and parsley

1. Render of fat from bacon then remove bacon.
2. Add vegtables to fat and sweat them down.
3. Add sausage and barley and let it slightly heat for a few minutes. ( i think the thinking was to leave it long enough to pick up some flavor from the veggies)
4. Add stock of any kind and bring to a boil then cover and simmer about 45 minutes. (About 45 for raw natural barley or about 12 -15 for the pearled quick cook type. So how ever long it takes for the barley to double to triple in size and drink up most of the liquid)
5. Stir in marjoram nutmeg salt pepper and parsley a few minutes before serving.
( seemed weird salting at the end but i guess she thought the bacon fat had enough of a salt content for the initial cooking)
(You can also increase stock amount if you want it more like a soup or less for the more traditional barley stew type thickness. )
 
Yeah, bacon, sausage and stock all give you salt, so I´d expect that to be enough. Thanks for the recipe, will try soon! It contains the holy trinity of soup (onion, celery and carrot, also known as mirepoix) so it must be good :p Pretty sure the veggies and the bacon fat give off so much flavor that you could swap the sausage for lean meat (or any kind of protein, really) and still have an amazing dish. I´m not an expert on these things but letting the barley sit in the hot fat for a couple of minutes might leave you with a slightly more intact grain (instead of general mush). Looking forward to this one :)

Yea ive never had barley before and i thought it was amazing.
 
87 pounds lost? Wow, that´s a LOT! Great work, my friend. You know my opinion about dropping your calories by too much. Please don´t ruin your metabolism. I´m guessing the scale isn´t showing you much loss this week because of that salty soup, but in any case I would be very happy if you´d start incorporating regular walking/exercise. Even though it´d make your muscles suck themselves full of water and ruin your scale efforts for a couple of weeks. Your calories are already so low for a big guy. Speaking of which, I´m curious: how tall are you? I´m probably rambling, just got back from beers with the girls. Sorry about that.

Im not planning to dtop alot of calories just more. Im sure i will have some low days butlower than 2000 calories.
Im 6 feet tall.

Off day....... I wanna run away..

Breakfast- Bologna and cheese on low carb flatbread. (405 calories)

Lunch- slice of ham, babybel cheese round. (157 calories)

Dinner- mini street tacos. (1050 calories)

BMR- 2786
Cals- 1612
Total= -1174
 
Went to the farmers´ market with a friend yesterday and I just. couldn´t. buy. anything. Brain simply refused to work, to want anything or to decide anything. Went home, slept another 3.5 hours, stuff got mostly normal again. So... I guess I´m saying I hope you woke up with your brain inside your skull and not fallen behind the night stand.
 
An 87lb loss is incredible. Big well done to you :)
