Pretty sure the veggies and the bacon fat give off so much flavor that you could swap the sausage for lean meat (or any kind of protein, really) and still have an amazing dish. I´m not an expert on these things but letting the barley sit in the hot fat for a couple of minutes might leave you with a slightly more intact grain (instead of general mush).
