Mock Jambalaya
Mine is going to be:
1 cup (dry) of rice (650 cal or so) (I'm using half black, half white)
1 28 oz can of crushed tomatoes (250 cal)
1 cup of whole kernel corn (150 cal)
1/2 pound of pepper strips (frozen) (50 cal)
1/2 lb sausage links (4 @ 150 cal each, 600 cal)
1/2 lb chicken breast (250 cal)
1 med head of garlic, roasted
A strong chicken broth
Seasonings (see below for a list) to taste (half tsp to 1 tsp of each)
1/4 cup butter (400 cal)
Makes around 10 cups, around 250 calories per cup, depending on the kind of sausage you use and how much your rice cooks up.
I prepped everything ahead of time, but in theory, you could just dump it all into a pan and cook it, but leave a LOT of room for expansion, otherwise your rice and sausage is going to make a huge mess when it swells up to 3 or 4 cups (rice) and triples in size (sausage).
I'm going to figure there is somewhere around 2400 calories in the whole pot of goods. About 10-12 cups of food, all total; your mileage may vary
Brown the meat in a pan first, cook the rice before you dump it in the crock pot, then add the tomatoes and veggies straight in. Then, once it is all in the crock pot, add the broth and the seasonings, and just let it simmer for a few hours.
Come to think of it, you may want to cook the rice in the broth, it may be why mine came out too soupy.
The spices that are going in will include cumin, turmeric, coriander, paprika, garlic salt, onion powder, cayenne, oregano, thyme, ginger, and some worcestershire sauce. It had a bit of a citrus taste to it, so I added the butter and garlic salt. My roomy says black pepper made it delicious, but I can't stand the evil peppercorn demons, so it's your call.
I'm sure this will be a huge amount of food, probably enough 'Jambalaya' to last me for days; but I am going to go for it and have lots of the stuff ready.
