I love cheese that way. I make it for my boys and me in the microwave though, just lay the slices on a plate and blast it till its all bubbly and you can pour the grease off and blot it and its like cheese leather. I would think the calories would be close to lowfat cheddar or whatever.

Happy, did you mean the fried cheese? The thing I like is the crispy texture of it; my favorite cheese is always the kind that has gone all golden and crunchy anyhow, so it's great this way :D

Mmmm... Quesedillas sound good...

Okay, total food for yesterday:
An avocado (large, 400 cal or so)
A cup of black rice with a taste of honey and butter (300 cal)
2 fish balls (100 cal)
A cup of Veggies Vindaloo (Black rice, veggies, vindaloo paste, 200 cal)
Smoked Almonds (300 cal)
2 PB&J rollups (400 cal)
Chimichanga (300 cal)
A handfull of candy (200 cal)

Total 2200 calories. Not too bad for the day.

Today so far:
Sandwich (400 cal)
2 PB&J rollups (400 cal)


All righty, I'm off to go play for a bit :D

Costco hot dog (550 cal! I didn't know it was so much! 200 cal in the BUN alone!)
Of course, some veggies vindaloo in black rice. (200 cal)
About half a pound of grapes (200 cal)
Red Anjou pear (100 cal)

2000 calories down for the day; 2 smokes, and a nice workout that left me feeling tired. Spent a lot of time with an upset stomach from the fruit, too. That was lousy.
 
sorry it was vindaloo veggies - but i guess vindaloo is somekind of product which we don't have over here hehe.
 
Vindaloo is a kind of Curry ;)
It's a spicy blend of ginger, coriander, turmeric, cumin, fenugreek and other spices. It is one of the base sauces in Indian Curries and tasty, if you like hot peppers.

Today so far:
Sandwich (400 cal)
Grapes (200 cal)
Avocado (400 cal)

I'm definitely full now, but I was on a binge at the beginning of the day. I'm sure glad we bought 4 pounds of grapes; I've been able to binge on sugary foods without the sugary foods :D

Later on I am looking forward to making a couple of quesedillas finally. 2 tortillas are 110 cal, with a good sprinkling of cheese = 200 cal for a quesedilla, total.
I think I am going to probably oversalt them, but I am craving it today.

Well, off to play :p
Maybe some more of my veggie/rice/curry concoction.
 
Lol, not really, no. It was a big beefy hotdog with a bunch of Kraut, Relish and Onions on it, but I wouldn't describe it as "overly tasty". Yes, it was good, but worth 540 calories? No way!

Okay, so I am adding 2 pears and some veggies vindaloo to my day's calories:
Pears (200 cal)
Vindaloo (300 cal, I added some cheese)

1500 calories so far, today. Enough room left for those Quesedillas!
 
yayy you can enjoy them without feeling bad about going over the allowance :)
well done done on controlling the sugarry binges - another thing that makes me feel really full (which totally surprised me) is a carrot or two - they actually have negative calories and they stuff me so i dont even want to snack any more (i think also they make my jaw tired which puts me off the idea of chewing again for a while)

Well, I walked up over my minimums with 4 of the quesedillas, but I feel a lot better now. 800 calories or so puts me at 2300, which is in the middle of my selected range; I could be doing much worse.

I am thinking that the pears are really too much for me to handle, at the moment, so I might just have to leave the rest of them for my roomie, but the grapes don't seem to be causing me any lower GI distress, so far. I even eat a bunch of them with no trouble, but I have a pear or two and it seems to just be too much "healthy food".
I need more avocados, too, but smaller ones. Those huge ones are definitely tasty, but they are 1/5 of my daily calories.
Anyhoo, I'm off to bed, I think. Have fun!
 
It's a new day, and I started it off with some breakfast taquitos for a total of 600 cal.
I'm going to have some fruit before long, and stay focused on my fruit and veggie intake for today. I'm planning to make some Jabalaya, for dinner. Chicken, sausage, black and white rice, tomatoes, several kinds of veggies, and lots of seasonings; it sounds like a plan to me. Jambalaya looks like it runs around 300 calories per cup, so I will try to add everything up and keep it in that neighborhood. My only problem is I don't like shrimp, so I will definitely have to skip those in the mix.

qjay could you poss post the recipe of that jambalaya ? i love jamabalya but all of the ready made ones are fit to burst with calories and i have no idea how to make it

Mock Jambalaya

Mine is going to be:
1 cup (dry) of rice (650 cal or so) (I'm using half black, half white)
1 28 oz can of crushed tomatoes (250 cal)
1 cup of whole kernel corn (150 cal)
1/2 pound of pepper strips (frozen) (50 cal)
1/2 lb sausage links (4 @ 150 cal each, 600 cal)
1/2 lb chicken breast (250 cal)
1 med head of garlic, roasted
A strong chicken broth
Seasonings (see below for a list) to taste (half tsp to 1 tsp of each)
1/4 cup butter (400 cal)
Makes around 10 cups, around 250 calories per cup, depending on the kind of sausage you use and how much your rice cooks up.

I prepped everything ahead of time, but in theory, you could just dump it all into a pan and cook it, but leave a LOT of room for expansion, otherwise your rice and sausage is going to make a huge mess when it swells up to 3 or 4 cups (rice) and triples in size (sausage).

I'm going to figure there is somewhere around 2400 calories in the whole pot of goods. About 10-12 cups of food, all total; your mileage may vary
Brown the meat in a pan first, cook the rice before you dump it in the crock pot, then add the tomatoes and veggies straight in. Then, once it is all in the crock pot, add the broth and the seasonings, and just let it simmer for a few hours.
Come to think of it, you may want to cook the rice in the broth, it may be why mine came out too soupy.

The spices that are going in will include cumin, turmeric, coriander, paprika, garlic salt, onion powder, cayenne, oregano, thyme, ginger, and some worcestershire sauce. It had a bit of a citrus taste to it, so I added the butter and garlic salt. My roomy says black pepper made it delicious, but I can't stand the evil peppercorn demons, so it's your call.

I'm sure this will be a huge amount of food, probably enough 'Jambalaya' to last me for days; but I am going to go for it and have lots of the stuff ready.

I'm not really impressed with it... It came out soupy and the rice all blended to be... black. I only had a 1/4 pound of chicken, too.
Blah, ah well, it makes for a decent dish, but I was hoping for something else to come out of it.
 
I was able to do some good salvage work ;)
I added a few tablespoons of butter and another teaspoon each of paprika and garlic salt. My roomie says it's even better with some black pepper, but I can't stand the stuff.
Well, it could sure be worse. ;)
That recipe above makes about 12 cups, but mine came out a bit more because of all the extra liquid.

So, my total day came out to be something like this:
Taquitos (600)
Grapes (200)
Rice (200)
Jambalaya (500 for 2 cups of it)
Sausage (350)
PB&J Rollups (400)
Very sweet oatmeal (400)
2650 total calories for the day, probably a little over just because I am not the strongest kitchen guesstimation specialist.

Went down and worked out for half an hour, 3 smokes for the day, had a bunch of sugar free gum. Drank a lot of water, but I'm still thirsty; probably all the starchy rice-filled badness.

Headed to sleep. ZzzzzzzzzzzZZZZzzzzzzzzz...........

i am going to have an experiment with it someday this half term holidays. i will see if i can make mine less liquid than yours though .. if i can i will let you know how i did it lol
