Put DOWN the Nutella!

Been doing amazingly well today- told you I would!!! Got a bit dolled up and went out for lunch, just went to a hotel restaurant as there isn't really anywhere else around here to get food lol. I was really good, I got a chicken salad minus the almonds and parmesan, dressing on the side. Actually couldn't get through it all, felt really bloated after morning tea- I think from not allowing myself to get hungry first thing in the morning because of the amount of food I ate yesterday! Feeling it a lot less now though. Afternoon tea will just be veg and dip, and dinner is leftovers so all good n easy!

Workout was pretty hard today, wanted to get a realy burn going... Actually got a little carried away and ended up doing 10mins more than I normally would! Guess that isn't a bad thing though lol. Wade woke up towards the end so he stood there half asleep with the jab pads and let me box him for a bit at the end.

One last thing... Since there is 12 weeks left of the year, and I still want to reach my goal by then... I'm starting a new 12 week challenge! I have a solid eating plan, hopefully by the end of the week I'll have a rough n tough workout plan from that trainer too. So going to go hard and go get it!!! Going to start counting those days DOWN!

Food for tomorrow- Day 2 of 84

B- 2 hardboiled eggs, 1/3 avocado, 1 slice wheat free toast

S- 2 wheat free crackers, 1 tsp nut butter

L- Mountain bread pizza with chicken breast, spinach, tomatoes, cream cheese

S- 200g yogurt with 20g coconut

Thank you so much Free!! I'm definitely determined- this one has her mojo back!!

So I'm a bit slow on new social media trends (I'm pretty much FB, and that's it) but I've recently discovered Pinterest. And haven't been able to get off it lol. Finding so many amazing new healthy food blogs and amazing recipes that I SO WANT TO TRY!!!! Check this one out for example, healthy cinnamon rolls that sound SO easy! http://immaeatthat.com/2012/10/09/6-ingredient-cinnamon-rolls/

I've got 3 boards at the moment, Protein Snacks, Healthy Recipes (anything that doesn't fit into the category of protein) and Fitspiration, which is pretty much a lot of awesome bodies I would love to have and motivational quotes. So I have crazy Pinterest love going on right now!!

Yesterday was 1 perfect day down, 5 to go!! Woohoo!!! Started today off with an insanely tasty breakfast- I got 1/3 of an avocado and mashed it, then added 2 eggs, a sprinkle of both basil and thyme, salt n pepper, then whisked it together and make a herby/ creamy scramble that I ate on toast. OMG. Was about a million times better than I was hoping for!!! Nom nom nom.

Will be back later to put up tomorrows food! And to let you know whether I got around to swimming or not, lol!

I went for a swim!!! Was a bit put off when I went out to the pool- it's been really windy so had to spend about 15mins scooping out all the leaves, and then had to scoop out a lizard which kept swimming away from the net... Arrgh, I hate it when I have to get lizards out of the pool, I always think that when I go to swim it's going to come back in after me and eat me!! Or maybe just bite, but seriously... Makes me paranoid!! Anyhoo, got in a full 30mins! Went out at 9am and it had only just hit 30 degrees c so wasn't too hot. Still came back inside more tanned! Happens every time I step out of the house now!!!!

After that I had morning tea and chilled out for a bit, and marinated chicken for lunch today and tomorrow and some steak for dinner. Cooking my chicken now for lunch!! Also had a cup of tea- been totally loving Pukka Green Tea with Chai, it's so yummy! It has cinnamon and star anise in it, and a bit of licorice root. Nom!

Food plan for tomorrow- Day 3 of 84

B- Baked oatmeal cake with 1/3 cup oats, 1 banana, 1tbsp lsa, 1tsp cinnamon

S- 2 wheat free crackers, 1/3 avocado

L- Mountain bread pizza with pesto chicken breast, tomatoes, spinach

S- 2 hard boiled eggs

D- Beef fillet steak marinated in garlic, with 1/2 cup brown rice and stir fried veg

Exercise- 30min strength training routine

A little known fact is that the Western Australian Water Lizard is capable of eating 15,000 times its body weight.

Lucy! You lizzard wrangler you!

Nice job on long swim. I love to swim for exercise...I was a lifeguard all through college and even when I was a young coach. But swimming always makes me so dang hungry!

MrVee- Haha I swear it could!!! They do chase you if you get too close, and the only thing that pops into my head is OMG IT'S TRYING TO EAT ME! Same thing happens with cockroaches, spiders, frogs etc. Must be a girl thing!

Brawny- Ooh lifeguard, how cool!!!! I love to swim, actually didn't swim for YEARS but as I'm physically incapable of going for walks/ running I needed something to fill the gap between strength training days. I guess it was just luck the company house we were given has a swimming pool!!

Oh guys, because I'm always looking for ways to make my food more exciting, look what I did to my oats this morning:

I made cookies- for breakfast, And they were cookie-tasting enough to make me feel like I was being incredibly naughty!! Here's what I did:

34g Oat flour (I grabbed a heap of oats and processed them till they turned to flour)
1 ripe banana
1 tbsp raw cacao
1 tsp cinnamon
Small handful of mixed raw nuts, chopped (around 1.5-2tbsp worth)
Pinch of salt
1 tbsp water

Mix it all together and bake at 180 degrees celcius for around 12-16mins. And all 6 cookies is one serve! Win!

They were crunchy on the outside and chewy in the middle... bliss! Haha and perfectly to my meal plan too. They weren't incredibly sweet, but the banana was enough to take the bitterness out of the cacao and make them taste dark chocolate-y. If you had to I guess you could add like 1tbsp sugar/ honey/ other sweetener, but these were perfect for me!

Also thought I'd add yesterday was a perfect day- so 2 down, 4 to go till weigh in!

Here's the workout I just did, it kicked my ass a little:

Warm up

Circuit x5
20secs fast punching
15 squats
Drag boxing bag to end of room and back (weighs 20ish kgs, more awkward than heavy)

3x 15 deadlifts (20kgs, it's all the weight I have at home... not that heavy, but maybe enough for now till my knee stability improves)
3x 15 donkey kicks

Circuit x 5
10 push ups
10 single arm rows (with 10kg on a dumbbell)
30secs plank

Stretch and cool down

Gunna have a sore upper back tomorrow, that last circuit HURT! I didn't rest between circuit rounds either, the idea was to get through it as fast as I could. I had 30sec rests between the sets of deadlifts/ donkey kicks though.

Food plan for tomorrow- Day 4 of 84

B- 2 eggs with 1/3 avocado, scrambled with basil, thyme, salt n pepper and on 1 piece wheat free toast

S- Apple, 40g mixed raw nuts

L- Wrap with tuna and beans, homemade tomato sauce, cream cheee, and salad

S- 2 wheat free crackers, 1tsp nut butter

D- Homemade chicken Parmigiana (coated in brown rice crumbs) with salad- cucumber, tomato, olives with a sprinkle of feta and apple cider vinegar

Exercise- Swimming 30mins

Good morning all!!! Ok. So. Yesterday I let boredom get the best of me (once again. I am really hating unemployment!) So was a bad day food wise... Argh. Nothing I can't come back from, smashing out an awesome day today!!!! Have been good this morning, been for a swim (despite getting repeatedly swooped by a really crazy butcherbird!!! I showed IT!!!) Nothing stopping me!!! 3 perfect days, going to get it!!!

Look what I made this morning:

I was looking for a way to use up some coconut and stretch out my (expensive) raw nut mix, so I made chocolate!!! I used approx...

100g homemade coconut butter, liquified (I use about 1/3 of a kg bag of organic shredded coconut, blitz it in my Vitamix until completely liquid, then use a third of that mix and keep the rest in the freezer. I'm sure coconut oil will work fine too)
90g chopped raw nuts (I use orgnic ABC mix)
1/8 cup organic brown rice syrup (low GI fructose free sweetener... I'm sure honey, agave, maple syrup etc would work fine too)
12 vanilla stevia drops (or just use another tbsp sweetener)
1/2 cup raw cacao powder

Mash it all together until it forms a really thick sludge (mmm lol. It's like mud! Still a little crumbly too) Press it into a chocolate mold. This made 2 and a bit 100g bars. It's not sweet, it's like a dark chocolate. You could also omit the cacao and add a little extra vanilla for a white chocolate experience! Or add fruit, seeds etc. :hurray:

TASTY!

Food plan for tomorrow

B- Strawberry overnight oatmeal pudding with a punnet of strawberries, 1/3 cup oats, coconut, chia, and cinnamon.

S- 2 hardboiled eggs

L- Pesto chicken breast burger patty (making them shortly!) with salad

S- 2 crackers with 1/3 avocado

D- Leftover tuna and bean casserole (which I'm also making today)

Exercise- Going to do a modified version of this: http://www.bodyrock.tv/2012/08/31/hot-leg-show-workout/ I can't do plyo/ jumping stuff because of my knees, so modifying a few exercises. Will also be doing a bit of boxing etc.

Another post from my kitchen- been feeling creative today!!! This smells SO GOOD, I wish I could share it through my computer!!!!

Super green pesto chicken burgers

500g organic chicken breast mince
1 finely chopped brown onion
1 medium zucchini, grated
250g fresh/ frozen spinach, fluid squeezed out
2 tbsp pesto
1 cup brown rice crumbs
1 egg
S&P to taste

I smushed everything together with my hands (messy fun!) then divided it into 8 patties (these will freeze well). I grilled them in the pan 5 mins each side, then finished them in the oven for another 15mins (I could only get 4 in the pan at a time, I did this to save me having to stand there for ages!) Salad is tomatoes, cucumber and olives with a splash of apple cider vinegar.

Hello again... I've been a busy one today!!! I've been clogging up my facebook news feed for the last week with my cooking/ baking pics and had a pretty big response from people, so decided that instead of clogging up my Facebook page I would start a recipe/ workout blog. If anyone is interested in checking it out, it's here: http://www.lucysfitlife.com/ There's pretty much nothing on it yet, but planning on having that change pretty quickly! I will of course still be posting on here every day... but I'll be posting recipes etc on there from now on. I'll let you know if I make something particularly awesome that warrants a share!

Anyhoo... had a perfect food day (yay, after yesterdays epic fail!) Hope everyone is having a good weekend!

AThose food picks are making me drool! Someday, after I retire, I want to go to cooking school. But just to take the classes I want...like meat class....do they have meat class? That's the one for me!

Hey hottie, just giving a quick post! Have to recap on your diary next week when i have more time.Your food, as per, looks to DIE FOR. I wish i could cook like you:) You obviously have a passion for it and also you are so talented:) nom nom nom...

Hugs and love daaaaarling xx

Hey Brawny and Irish, thanks for saying so!! I'm really not that creative in the actual photo and food presentation so it's a bit difficult to make food look SUPER appealing, but I do try. And yea, it did taste pretty damn good!! Lol!!!!!!

Arrgh I woke up at like 4.30am this morning and couldn't get back to sleep. Boo!!!!! Eaten breakfast already, just psyching up to do a workout soon... Will post food plan for tomorrow later on today!

Think I might try making the cookies. Been wanting to see what my food processor could do anyway. Just have to find the Celsius knob on my stove. :D

Mmm, cookies for breakfast is never a bad idea!!!

So workout today was pretty rough, I'm feeling sufficiently wobbly and weak now! Argh waking up so early is wreaking havoc on my brain... It's already catching up to me, sosososo tired. And ate lunch so early because I also ate breakfast early... vicious cycle! Going to force myself up soon and make a cup of tea... ah, caffeine, how I love you!

Food plan for tomorrow

B- Creamy green scrambled eggs on a piece of wheat free toast

S- Apple, 4 squares homemade chocolate

L- Mountain bread pizza with homemade tomato sauce, tuna, spinach, sprinkle of nutritional yeast flakes

S- 2 wheat free crackers with 1 tsp nut butter

D- Salmon, cooked in foil in the oven with lemon and herbs, served with salad and mountain bread chips

Exercise- 30mins swimming

Ok I was having some sleeping issues too...One thing that helped some was I started doing a really good stretch routine (like 20 minutes) before bed time. It helped quite a bit.

Thanks for the tip Brawny, I might have to do that. I have to stretch my legs out twice a day anyway, usually I do it the second time after lunch. Maybe I'll move it to before bedtime!

Ah so not the greatest of days yesterday, that always seems to happen when I'm tired!!! My body just screams SNACKS SNACKS SNACKS! At least everything I ate had nutritional value, also I didn't REALLY over-eat, just ate more than I should on a day-to-day basis for a good loss. Grr. Weigh in tomorrow too, hoping the scales are at least down from last weeks gain (I know that they should be but lack of sleep seems to really affect my weigh ins, regardless of how good I've eaten!) Sore from yesterdays workout too! My poor butt!

Had really tasty green scrambled eggs for breakfast- http://www.lucysfitlife.com/?p=95

Going for a swim soon, it's getting up to 38 again today so once again I'm going out early!

Food plan for tomorrow

B- Homemade ginger oatmeal pancakes (been craving ginger, thought I'd give it a shot)

S- 2x hardboiled eggs

L- Mountain bread tuna and egg tarts with salad

S- 2 wheat free crackers with 1tsp nut butter

D- Leftover salmon with salad and mountain bread chips

Exercise- 30mins strength training. I have a super sore butt today from yesterdays workout, so I think tomorrow will be mostly upper body/ core work.

Husband has the day off with me today, so we've just been chilling out and watching TV. Going to make some dairy-free cheese this afternoon and do a bit of cleaning but not really any other plans!
