Having a good Birthday - Thanks everyone for the Birthday wishes. I made all my bffs (best forum friends :p) an ecard! Enjoy...

Also... I made a cheesecake! (you can't have any... unless you can make it here by 7pm... lol) It's my own recipe, Lo Fat, Lo Cal but Still Oh So Yummy Caramel Macchiato Cheesecake. Took it down from about 500-550 :eek: calories to 319 with the caramel sauce. We've not cut into it yet but the batter tasted soooo good!! (yeah, had to sample - but just a little)

Here's the recipe:

Amy's Lo Fat, Lo Cal But Still Oh So Yummy Caramel Macchiato Cheesecake

INGREDIENTS:
1c. low fat grahm crackers; finely crumbled
2T. powdered sugar
2T. melted butter
1T. vanilla extract

24oz. fat free cream cheese; room temperature
1c. sugar
1/4c. corn starch
1 egg
2 egg whites
1c. fat free sour cream
1/4c. espresso ( I went to Starbucks and bought just a double shot – no cream)
2t. vanilla extract
caramel ice cream topping

DIRECTIONS:
  1. Preheat oven to 350 degrees F. Lightly coat a 9-inch spring-form pan with nonstick cooking spray.
  2. Mix together the graham cracker crumbs, powdered sugar, melted butter, and vanilla until well combined (texture of wet sand). Press into the bottom of the prepared spring-form pan, and 1 inch up the sides. Bake in preheated oven for 8 minutes, then remove to cool on a wire rack.
  3. Reduce oven temperature to 325 degrees F.
  4. Beat the softened cream cheese in a large bowl with an electric mixer until fluffy. In a separate bowl combine corn starch & sugar. Gradually add to the cream cheese, beating until blended. Add eggs & whites one at a time, beating well after each addition. Stir in sour cream, espresso and vanilla. Pour batter into the baked and cooled crust.
  5. Bake cheesecake in the preheated oven for 1 hour and 5 minutes; then turn the oven off, partially open the door and allow the cheesecake to rest for 15 minutes more. Remove from the oven, and run a knife around the edges. Cool cheesecake on a wire rack to room temperature, then cover the spring-form pan with plastic wrap, and chill in the refrigerator for 8 hours.
  6. To serve, cut the cheesecake into 1/10 wedges and garnish each slice with 1T. caramel sauce.

1/10 slice no caramel:
259 calories, 3.3g fat, 45 carbs.

1/10 slice with 1T. caramel sauce:
319 calories, 3.3g fat, 59.5 carbs

Got another whole mile in today. Did a little (witness free) botty shake and a dip for everyone. ;) And I had my first injury of my whole health kick. :( almost poked my eye out! Got my radio cought on a little flag that we have by our front door, bent down to pick it up and jabbed myself with the tip right between the eyes - ouchy!! and it bled. :(

But I might be getting a walking buddy - Yay! My sister's feeling all motivated (jealous) about my weight loss, she says she may start tagging along. But I'd have to wait until evenings to walk. Don't know if I like that - too tempting to just skip it all together.

Had an ok food day. I was anticipating the cheesecake so I made sure I was reealllyyy good... then it turned out to be less cals than I had thought. So I came in under. Dang. But the cheesecake was sooo good!!! I'm drooling just thinking about it! And seriously - what kind of friend would I be if I didn't post a picture of my lovely birthday cake! ;)

Breakfast: Light & Fit Yogurt, biscuit with jelly
Lunch: 6" Subway veggie sub, 1/2c. fake crab, 1/2 100 calories pack of cookies, 4oz. cherry apple cider
Supper: Grilled mahi mahi, baked potato with salsa, salad
Dessert: Cheesecake -mmmm!

Totals:
CALORIES: 1,328
CARBS: 200
FAT:34
PROTEIN: 62


Water: 102oz
Exercise: 1 mile

Just got back from my walk. Had to cut it short because Jesus H. it's freakin' hot out there!! Only did about 1/2 mile but I'll go back out and finish up night. Water isn't going too well either, only had 20oz. (finishing that up right now)

But calories are low and it's mostly fruit & veg. And I havn't touched the cheesecake - yay!
 
exercising in the heat is always a challenge. splitting your workout might help. an hour before it gets too hot and maybe an hour as the sun goes down....

I try not to be a potty mouth, but DAYUM that cheesecake looks good! I was trying so hard to refocus..you should be ashamed of yourself for torturing me this way! :p
 
Just got back from my second walk - my thighs are twitching. A weird feeling - yet somehow a triumphant one. And I am dripping with sweat... I think I like it ;) I forgot how nice it is to be tired yet energized. It's been a very long time.

See, I have Chronic Fatigue Syndrome. I've had it for years but this is the first time in the over 11 years since my diagnosis that I feel like it isn't holding me back from something. In the fabulous words of... well, me. ;) I kicked it's ass. Yeehaw! (don't worry, I never say that IRL - lol)

So my walk today totaled 1.34 miles. Holy. Crap. My first try was at about 3ish I didn't take into account that 1. we live near a school and jebus the traffic is crazy at that time! and 2. it was dang hot out! But tongiht, the temprature was just right and I was determined to round that last block in front of the school. Even if I had to call someone to pick me up afterward.. lol. :p

Came in way under today - checked my calories after supper and it was 900. So I was forced to eat a piece of cheesecake with caramel syrup. *sigh* ;)

Breakfast: none - slept too late
Lunch: Campbell's Healthy Selection Tomato soup, 5 crackers & 1/8c. shredded cheese
Snack: 1 apple, 10 mini toasts with cream cheese, 3 grape tomatoes sliced onto the toasts
Supper: Broiled pork chop, butternut squash with margarine (eww) & cinnamon sugar, salad
Dessert: leftover cheesecake

Totals:
CALORIES: 1,212
CARBS: 147
FAT: 52
PROTEIN: 44

Water: 64oz. (just barely)
Exercise: 1.37 miles

The food thing is starting to take root - and it's rubbing off on the family! Dad's actually counting calories (to a point - we'll say he's being conscious about them) and mom is walking at work. I'm just in shock, these two people poo-pooed my attempts about 3 weeks ago. I'm glad for them. Joining the forum and losing weight is probably the best thing I've ever done for myself.

Now I just need to start working on regulating my sleep patterns. I don't get sleepy until 1ish and then I sleep too late and it starts again the next night. If I go to bed before I'm tired, I just lay there listening to NPR until 1. It's frustrating!
