Today's been a good day. Went to the gym and did 30 min of my stretch class and 40 min cardio class. I missed several days last week so was good to get back to it.
Went grocery shopping but didn't have a lot to buy and otherwise stayed home.
Back in May we were flying home from UT and we accepted a bump...spent the night in a hotel there and were given vouchers for several meals..and were also given two $400 travel vouchers. I've been wanting to go to Santa Fe so have been watching for a flight around $400. Finally today I found one...we will go in May. We are not skiers so that time of year is fine for us ...we will just be staying in our timeshare condo there and site-seeing. We have never been there so are looking forward to it. I love to travel and esp to go to new places. So if anyone has tips on what's good to do or see in that area, let me know. It's a ways off still and we have another trip to take before that so I won't be doing much research/planning yet.
Breakfast today was a slice of whole wheat toast with 1/2 t. light Smart Balance and 1 t. grape jelly.
AM Snack - 1/2 Nutri-grain bar and later I ate 10 slices dried apple and a few grapes. Want to add that being able to eat JUST HALF a bar is a real accomplishment for me! I used to never be able to eat just 1/2 of anything!
Lunch - grilled cheese (only 1 sl. bread, 1 sl. cheese and 1 t. light Smart Butter),
Afternoon snack - Light chicken noodle soup, 5 saltine crackers, and more dried apple slice and grapes.
Dinner was a little high in calories..I made salmon lumpia and I ate 3 with 1/2 cup stir-fried cabbage, carrots and onions on the side. While cooking I ate 10 more dried apple slices and a couple grapes. I'm very full after eating this but know I will be hungry again soon. My appetite increases in the evening. I'm still within my calories but will likely go a little over in diabetic carbs as the dried fruit really packs a punch!
My evening snack will probably be baby carrots with 1 T. ranch dressing.
ETA: Forgot to mention that my weight was back down to 165 this am finally!! Now If I can just be consistent with my diet, I'm sure it will drop more.
