There are plenty of exercises you can do with dumbbells - in fact just about anything you can do with a bar can be done with dumbbells. All you need is a decent set and a bench. You can also do isometric exercises, i.e. exercise using your own body weight. Pushups, lunges, chin ups, etc. are great for a starter routine. For these 4-6 meals a day, you want to calculate how many calories. Go to this site and figure out your Basal Metabolic Rate - this is basically how many calories you need to consume daily to maintain your weight in comparison to your height and weight. If you want to increase weight, increase your caloric intake by about 500 calories per day - to decrease weight, create a 500-calories-per-day deficit from this number, whether by eating less, exercising, or (most effectively) a combination of the two. A good way to split it up is to Create 3 decent sized meals that take up about 70% of your intake, and then 3 smaller meals that will make up the other 30%. That way you are keeping your body full throughout the day, but never overindulging.
