Verobc - the 2 weddings are great motivation - they are quite a while - so it gives me time to get to my goal weight!! I know better than to say that I have plenty time..I know losing weight/toning up takes time - unless someone does a crash diet (mind you I can't crash diet with 55 lbs!!)
Don - thanks a lot! Things are bad, not too bad but you know - life is all about ups and downs...you have to tackle the problems as they come.. I feel a lot better today - in fact I am well! Spanakopita looks yummy!! So you can eat the filo?
Katie - thanks! I do have to be a magician with the budget...eating near-100% organic on one (not too high) salary is challenging! We never throw food out though - so it's really efficient! I realized when I didn't plan the food ahead - we ended up over-eating/eating out/wasting food -wasting money.
Camila - 2 weddings indeed - one in the US, one in Europe - can't wait. Grocery budget is tricky - but i do my best....yes, I am trying your bean burger recipe - my husband was not too happy - but he will eat it - I hope he likes it - I'll serve it with wild rice& salad! The other new dish I am trying is Cauliflower & chickpea pilaf!!

oh - does anyone remember that i contacted my family here in the US last week? I got a letter today!!! I am soooooo excited! Don't you just love fishing out a hand written envelope from your mail box? I loved it!!! I was invited to a family reunion (it's the family of my great great grandmother's sister - she had over 10 children) I won't be able to go because I will be out of the country!! But I m so happy I have a contact! The lady who wrote is in her 90s. So sweet.
I went to the track today!!The weather permitted outside walking - I turned into an icicle - well almost! The temperature was in the 50s by the time I finished the walk & i was not wearing coat/jumper - just a long sleeved shirt.

What an awesome day today!! Well, our real anniversary is on Monday - but we decided to celebrate it the whole weekend.
We met at the airport for the first time 2 years ago - very classic - a treasured memory 4ever!
My husband got me some balloons - there is a message in each of them - so I have to wait until they deflate...I could read a few but not all of them.
We went out to the lake and took some pix - they look pretty awesome!
I made him a DIY present - he loved it - if anyone interested - it's under $10 & makes a great gift:
We ate out....same restaurant where we went 2 years ago - I remembered better food...lol...so we shared: cheesy breadsticks, a small pizza & a large cookie... the exact same thing we had 2 years ago... very romantic.... but it was not worth the calories!! Erm...I had a Corona too...
To work off the calories - I was in the gym / outside track the WHOLE afternoon.... My husband decided to step up as my personal trainer - since I have been complaining for weeks about my weight loss - well the lack of it.... so military style boot camp for me...in the gym - sit ups & other basic training-like exercises, followed by an hour walk in the track!!
Justina - That is such a lovely gift idea! I should totally do that. My two year anniversary with bf is in June...will keep this in mind And don't worry about the meal...I'm a sucker for sentimentalism so I think it is just fine Oh and props to you both for celebrating to entire weekend...that is the only way to celebrate!
How awesome that he's willing to do that for you! Working out together can also be tons of fun and very silly! Great job on the workout...I admire you, lol. It's fun to hear about a couple that seems so happy together...your story of meeting is so sweet I get all "Awwww" every time you mention it!!

Well Sunday night, and I am in pain from exercise - haha ! The good kind of pain! When you are proud that you did your exercise & you feel it working kind of pain!!
Today I cooked at home - I made home-made mayonnaise from scratch - it took me...ermmm under 5 mins? I don't know why I haven't done it before. I know exactly what goes into it & it keeps for a week in the fridge. I made jacket potato (in the UK, baked potato in the US) - with tuna-mayo & side salad!! I love this - I wish I could eat potato every day..... I usually just have it once or twice a month.
We went to the ZOO! It was tons of fun! We walked around for 1,5 hrs - & I was tired by the end of it. We got home & my husband announced: gym time! I was like...what? I already did my walking...more than the minimum. But he was insisting... So we went to the gym...and my "basic training" continued....
Haha - I m actually quite happy (hindsight) that we went. Tomorrow is defo a day off from that - will do my cardio & sit ups though.

You sound so sweet with each other... and so young. I used to be romantic like that. Now, after almost 20 years of marriage, I do sweet things like The Laundry, or The Dishes, or Buy a New Appliance. OK, maybe I'm not that bad, but there are times...
