Hellish is a good way to describe it. Emotionally draining, too.
But ... today is a good day. I've had my morning yogurt and coffee. I got a bunch of legal docs in the mail to my attorney this morning (plus another payment ... ack!). I got the living room vacuumed (and it's amazing how much that makes the living room look better). I'm feeling productive.
Last night's dinner was salmon burgers and they turned out REALLY well. I was surprised. They're a little dry, so next time I'm going to try tweaking them some, but aside from that, the flavor was great!
Here's the recipe (loosely based on Mark Bittman's version, by way of Ezra Pound Cake's website):
1 lb salmon filets (skinned and cut into chunks)
1 tbsp dijon mustard
1/4 cup ground oats (or bread crumbs, if you prefer)
1 tbsp capers
1 shallot, peeled and cut into chunks
Put half the salmon in a food processor with the rest of the ingredients and pulse until well mixed. Add the rest of the salmon and continue to pulse until the salmon is completely ground up (but not a paste).
Form into 4 patties, brush with olive oil, and cook in a hot skillet (I used my cast iron one) over medium heat for 4 mins each side.
Serve on a whole grain bun, topped with remoulade mixed with a little mayo, lettuce, and tomato.
Each salmon patty is 264 calories, 14g fat, 224mg sodium, 5.2g carbs, 1g fiber, 26g protein.
