Yeah, kinda. The premise is that if the entire population of the the United States reduced their meat consumption to one third, and replaced it with vegetables, the social, medical, environmental and economic changes would be enormous, and for the better. (paraphrased from his website).

He does this by eating veggie during the day and only having meat with his evening meal.

I really recommend his book "Food Matters" if you're at all interested in the whole concept of sustainability and minimizing the footprint of what you eat.

I've never stopped to consider that most people eat meat every day, at more than one meal. That just blows me away. What do those bowels look like. Shit. Thats the second post today where I've talked about bowels.

Farmer's market this morning. Got the following:
baby eggplant
zucchini
red potatoes
beans
goat cheese (2 kinds - one with red pepper, one with figs)
okra

I have plans for the okra already - the last batch of pickled okra I made was fantastic and I want to make several more jars for the holidays to share with family. I have to hit the hardware store for more canning jars this weekend.

This weeks menu is going to be very eclectic and I'm still missing cameras, so photographic evidence will be slim. Bleah.
 
kara i love your food blog!! ive been frequenting it off and on for the past few weeks if only to browse through the photos you have up!!

the fruit salad with yogurt sounds and looks delicious-cant wait to try it out!

[edit] mmm eggplants-how do you eat them? when we get baby eggplants we boil them then cut them open and stuff them with cumin, minced garlic and chilli peppers :drooling:

I cleaned out the freezer last night and made a list of everything I have. *phew* Who knew I had all that stuff in the back of the freezer.

Last night's dinner was meatballs in sauce - really yummy.

I also pickled all the okra from the farmer's market. I have 1 half-gallon jar and 5 pints. The half-gallon is for me, and the pints will be given to various friends and family in about 6 weeks.

This morning I made biscuits and gravy (I know - not healthy at all, but it's my "free" day and I had a craving). I limited myself to 2 biscuits and obscene amounts of gravy and I'm so full I can barely move. I think the rest of my free day might be pretty light. :)

I have beef veggie soup going on the stove right now (actually just the beef part is braising in red wine - I'll add the veggies and the rest of the liquid in a couple of hours).

I also made banana pudding last night with skim milk. It needed to set up overnight, so I'm curious to try it and see if it has the right texture and flavor. I'm hoping that it works because this is a great low-cal version that I could indulge in a few times a week. If the banana version works, I'll try a skim version of chocolate pudding as well.

The only other thing on the agenda for this weekend is a batch of beef stock. When I cleaned out the freezer, I found 3 lbs of beef marrow bones, so I'm going to go ahead and get those cooking. I'll use some of the stock in the soup tonight and freeze the rest for later this fall.

That's about it. I haven't been to the gym since Thurs, but I've been riding my bike every day. Haven't broken out the rollerblades yet - I keep getting sidetracked with other stuff.

I'm still holding steady at 168. I haven't bounced back up to the 170s at all and I'm very happy about that. Now I just need to keep going DOWN.

And congrats for maintaining your weight in the 160's! 8 more pounds until you're lowest weight!! you're getting closerrrr! Im so happy for you! :cheers2:
 
Hey! I cleaned out my freezer this weekend too! I found a leg of lamb and threw it in the fridge to defrost. Any suggestions?

I made polenta for the firstest time ever this weekend also to go with some chicken concotion I came up with...I had a lot of grody red wine and stewed tomatos I needed to use up. hmmmm, probably should have saved the red wine for the lamb...

Hey...go to the gym. Just sayin...
 
Just checked out your photos on page 5 and I had to say that you have made a tremendous improvement.

I checked out your food blog too and it is brilliant. It was great that you did a nutritional breakdown. I really liked your green tomatoes idea - as I have tomato plants that are full of them and I was wondering what to do. I used to make tons of green tomato chutney - but the sugar content kind of knocked it off the things that I would eat. Less opportunity too since I ended up axing bread and hard cheese off my food list because of consistent gains (possibly due in part to sodium content). There is less incentive to make it if I am not going to be eating any.

I sat drooling looking at a page with some chocolate cake for a few minutes. It looked really good... I know that I am no good with portion control with things like that though.

Congratulations on holding your weight at 168. It is so nice when we dont bounce back up.

Other than that, nothing else going on.

I just wanted to say that I popped into your food blog today, and there's some pretty cool stuff in there.

Naturally, I ended up zeroing in on the, what were they called, chocolate cream tarts? OMG. I wanted to whip up a batch right on the spot.

Thanks for filling my head with visions of yummy chocolate treats. :)
 
Thanks guys. Had fun last night, had 3 margaritas and chicken and green chile enchiladas. Mmmm.

I'm up to 169.8 today (just barely scraped under that 170 number) but it's to be expected with all the salt I consumed. My fingers are really puffy today.

I'm probably not going to work out today. I have a ton of stuff to get done around the house and I *need* to get the outside storage area cleaned out to make room for a chest freezer before the holidays. Then again, cleaning out that *(#%)#(*&$ closet may turn into a workout. :)

Hi Kara! I've been lurking for a few months and this is actually my first real post. I just wanted to say you have helped me a lot with trying to not just lose weight but also really change my habits. I've started to read your journal almost everyday and I just started following your food blog on facebook. When I read you're thoughts on motivation I think it really tuned me in to staying focused. I'm taking more responibility for myself and I feel so much better as the days go on. I think what helps me is actually knowing more about nutrients and the the reality of eating junk. When I first came on here I would look at the before and after photos all the time and now I can't get enough of learning about all the information about food and fitness. I have such a greater understanding thanks to you and your links! :eek:

lynny - I'm really flattered and so glad that my ramblings have been able to help you. It's still a huge learning process for me and I'm one of those people who jumps into learning about something with both feet - so I can get geeky about it. :)

Sweat4health25 - I *love* Scotch eggs. Adore them. They're so not good for you, but I would eat them every day if I could. You know I've been really thinking about buying a Bento box and seeing what I can do for lunches. It looks like something fun - 'cause you know, I need another hobby! :)

So today was Monday all over. I wound up working out at lunch with a co-worker (nice thing about having the gym in the building across the street). ON the one hand I really like working out with someone because it keeps me accountable. On the other hand, she's not into weight lifting (although I've been trying to coax her into it) and so I don't always get to lift for as long or as hard as I'd like to. A lot of times I wind up going back to the gym after work just to get my lifting in.

Today, however, I didn't go back. I'm so tired already this week, despite sleeping in a lot over the weekend. With everything going on, I am finding myself unable to sleep on Sunday nights; I get wound up about the coming week, and the stressful things that I'm dealing with and all my rest and relaxation from the weekend are just lost. I'm thinking about going to the doctor and going back on meds for a while. I've been waiting to see if this would pass, but it's gotten to the point that I'm not being productive ... so I think it's time.

Oh, but I am down to 167.8 - whoo. :) Hey, I'll take every 0.2 lbs I can get over here. It's getting to be that TOM, so I suspect it'll go back up again here soon. But at least I know I'm solidly in the 160s.

More tomorrow, I'm sure. :)
 
So sorry you are struggling, Kara. I sure hope things start turning around soon. If getting back on meds will help, it is sure worth a shot.
