on a completely unrelated topic to the ones you nasty girls are on now, my wife bought me a magic bullet (the food processor) and we love it, sooo many things to do with that little guy, and very easy to use!

hey, I was wondering if you had any ideas for a healthier salmon patty? I remember my mom making these when I was little, and I'm pretty sure she friend them in butter or oil...just wonderin if you've ever explored that one :)
 
Ahh ... salmon patties and salmon loaf - both big staples in my house.

Pan frying a salmon patty in canola or olive oil should be fine. Use a non-stick skillet or a well seasoned cast iron skillet - and about 1T of oil. But if you're still concerned and would rather not fry at all, try spraying or brushing the patties with oil and then baking them instead.

If you miss the really crisp outsides, coat them in panko bread crumbs first, then a spray of oil ... and bake. The panko will crisp up nicely.
 
I told the wife I was wanting to fix some chicken parmesan this week...I've never made it, but thought it sounded good. What was your good goof?

sorry to hijack kara's diary :/ but basically, I pounded out two chicken breasts between wax paper with a flat tenderizer, then i dreged them in flour, egg, and panko bread crumbs that I had mixed with a packet of ranch dressing seasoning. Baked them at 350 for 30 minutes, took em out, spooned some tomato sauce on them and topped with skim motz cheese, then broiled them till the cheese was browning. served on a bed of whole wheat angel hair pasta :) My wife even loved it...and she's not an adventurous eater.
 
That sounds great. And anyone is welcome to hijack for recipes and cooking tips. Of course they may wind up on my blog at some point! ;)
 
yea panko is great, I believe it's of japanese origin, bigger than regular bread crumbs, but still light. I've never used them for anything other than coating, but it might be interesting to use them in meat balls or something like that :coolgleamA:
 
Well I crapped out today at the gym. I got through my stretches, some lunges, reverse crunches, and pushups. Then I got on the treadmill and my legs just wouldn't cooperate. I made it through my first 5 min run and then totally lost it. I mean totally. My legs turned to water, I stumbled, couldn't maintain a 3.6 brisk walking pace, and only out of sheer will, didn't fall.

So I quit after 13 mins and went home.

I'm really disappointed in myself. I've pushed through before and completed but this time I just couldn't. And I have no idea why.

So I'm sitting on the sofa feeling blah. I want to indulge in a glass (or 5) of wine, but I'm not going to.

Blah.
 
Maybe your body is fighting some germs...I always suffer from general fatigue a few days before a cold or flu hits...its usually the first sign. Drink some wine, a glass is good for you and might just make you feel sleepy enough to hit the sack earlier then usual and give your body that extra energy to fight for you.
 
I had my glass of wine last night and went to bed early. I feel fine - not sick or anything - just blah. I think a lot of it is just stress.

Anyway. Today I'm going bowling with a group from the office tonight. We moved it up a week to celebrate someone's birthday as well. So I'm going to have a couple of margaritas tonight and watch the rest of my day carefully. My Sunday "free day" is going to be somewhat curtailed as a result - but those are the choices we make, right?

In the meanwhile, I'm trying to drink more water today.

You did way better than I did- I didn't even attempt to exercise yesterday- sad.

I've never used panko. I've heard of it but not used it...might have to give it a try.

I hate sessions like that Kara. Could it be over accumulation of fatigue? I've seen weeks where my last workout was so weak compared to the week's 1st that it wasn't even funny. Also, how recently before the gym had you eaten? Lack of glucose does that to me sometimes. Or......it could be Owl's fault!! =P

Just wanted to thank you for your amazing food-porn blog. The pictures and recipes are incredible. Those coconut butter thins are going to become an evil sin for me!
 
Heheh.. the coconut butter thins are my nemesis. I can't make them very often because I'll eat all of them. :) Glad you like the food-porn. Learning food photography is tricky - but a lot of fun.

MGR - my Kroger and Publix both carry panko in the Asian foods section. Of course Whole Foods has it as well and the price is about the same, I think. It's a very light, flaky crumb, as opposed to the western style ground up crumb. It's incredibly bland and flavorless by itself, but it crisps up beautifully and lets the flavor of whatever it's coating come through, which is why I love it.

Went bowling last night with a group from the office. I had a great time, but drank too many margaritas. Of course.

Saw that new scary movie - Orphan - after bowling. Blah. I love scary movies - this one was not. Not at all scary. Not creepy, no good "jump" moments, nothing that even vaguely made me shiver. In fact a few scenes made me laugh out loud. And the twist at the end is just ... dumb, IMO. Oh well.

Farmer's market this morning was a success, followed by lunch at Pure, where I've been wanting to go forever. It was absolutely divine, but far down on the health-o-meter. Then again, Mexican food is rarely low cal, right? However it might inspire my first ever food-blog-restaurant-review post. We'll see.

Of course between margaritas last night and Pure today, that means this Sunday is not a free day after all. In fact I will probably hit the gym tonight and try to work off some of this chicken and masa that I ate at lunch.

New blog post coming tonight I think.

I'm going to be watching your blog as I'm a foodie although not as good as you. I also love spicy foods. I make these killer shredded beef chimichangas with a green salsa. Unfortunately it's really really fattening.
I really enjoyed reading the last 12 pages
