yeah... i'm thinking #5 should be "Boil the apple juice for another 20 minutes".

it did a fair job... probably would have worked better with mandarins or tangerines... citrus that has more of a tendency to fall apart easily. the pectin is certainly almost all gone, but the segments are mostly torn. still, i think they will work out with freeze drying. i only did 4 oranges, so i'll be off to the market this morning to figure out what to fill the rest of the unit with. the market across the street from me is ok, but there is a better store a short drive away... much larger produce section.

Now I know how they get rid off the membranes in canned mandarins. Do the orange slices get an equally weird texture?
 
yup, they look like those jarred slices you can buy off the shelf. a lot more of the insides are exposed so they have a sort of loose texture. freeze drying will make them harden up.
 
Low-everything baked goods never seem worth it. If I want something healthy I´ll have fruit and nuts. If I want cake I want the real thing.
 
something i might try some day with the freeze dryer... people seem to have luck cutting up cheesecake into little squares. i think i'm at a point where having little treats around is not all that distracting... and their shelf life would be more than a few months.

every time i see chocolate donuts, i can't help but think of JB...

sorta weird how some of those scenes mimic'd Bruce Jenner's decathlon win ...
who'da thunk then where s/he is today.

dang... i knew this pan would be big, but didn't anticipate the weight... >11 lbs ... empty..!

still on hold, though... ordered and still waiting on two of these silicone roasting racks that will just about cover the bottom and keep the birds above any liquid. hope they last. i wanted to get something non-metallic for this enameled pan.

2 chickens, vegetables, some basting liquid will certainly put it over 20 lbs.
never thought i would have to pay that much attention to a proper ... lift with your knees ... out of the oven... :)

freeze drying some riced cauliflower today... looking to see how/ if it grinds down to flour.

Logically it should but what are you planning to do with it afterwards?

actually what occurred to me... when i got my oven, there was a strap i was supposed to screw to the wall just in case something heavy fell on the open door and it wouldn't tip the entire oven over ( ... :) ... oven over). i fear if i pull out a rack with this pan full, it might just catastrophically topple things.
 
the next time you hear someone say they're going to lose weight by eating a lot more fruits & vegetables, make sure you cringe slightly on the word "fruits"...

i could blame this reading on the power cord temporarily skirting the scale, but i know the culprit... too tasty freeze dried fruit, not to mention the increased availability around here... :). it started out as... well a strawberry only has 4 calories, so half a strawberry couldn't be that bad. eventually i was trying to convince myself 4-5 apple slices "...couldn't be that bad"... but i was routinely breaking my fasting times... :(.

well... the good news is that i will sic IF on this problem.
it might take a week, but i'm sure i can correct this soon.

I wouldn´t blame the fruit here so much as the fact that you´re having it in processed form rather than fresh - or even that you´re breaking your fasting schedule. I do best when I´m eating plenty of fruit to keep myself from wanting sweet treats.
 
i wanted to get two birds about the same size, but i didn't notice this until i got home... :)
