speaking of efficiency... :) ... decided to get away from multiple pan roasting sessions with my biggest roasting pan to date...

this 7qt enameled pan was on sale... at 16½ x 11½ inches, nearly twice the size of my largest pan and much deeper. finally be able to roast two chickens more easily at one go or ... it will be here by Friday... i'll have to see if turkeys go on sale, though they're pretty cheap right now seemingly always set up as a loss leader around Thanksgiving.
 
ran into some giant blueberries this morning so decided to give them a shot in the freeze dryer today.
had to put a tiny "smile" in each one, but with my J-steel, it was a cinch.

i have been frequenting a FaceBook freeze dryer forum since i got my machine... maybe 3 weeks now. somewhat amazed that a good majority of the users are obsessed with freeze drying all sorts of candy. skittles seems to be exceptionally popular... yes, skittles... a single serving contains 34grams of sugar...nothing else... 100% sugar. ... hard to understand.
 
I just don't get the candy obsession either. Those blueberries, on the other hand, look delicious. Love the knife!
 
while lame-duck Trump continues to stay holed up like a whiny loser in the WH, the coronavirus is now devastating our country. i'm not that sure the Biden rescue will happen in time. Thanksgiving travel is spiking due to the mixed messaging from the Trump hangers-on opposing science. personally i'm not budging until probably the spring...a year in solitary because of that idiot Trump. i hope we never see another national embarrassment like this again in my lifetime.

here in San Diego like the entire country now, EVERY datapoint is trending upward... this is going to be a deadly winter.

Tuesday is the Health Section... with Wednesday Food, anything goes... definitely not always health oriented.

i miss the Monday Science Section... got deleted years ago... anyone else realize China is headed to the moon to bring back rocks? i wish the excitement of space that was around in the 60's would return. astronauts blast off... today it's, ...so?

Oh! Hadn't noticed the chickpeas, gues it was too early :) Space won't be exciting again (for society at large) until humans try to travel further out than to the moon - although it's been ages since we've done even that.
 
i've concluded that freeze dried fruit can be dangerous...

this is about 14 apples, but without the water, this whole bunch of slices barely weigh a pound or two at the most.
before you know it, you can easily eat 3-4 whole apples.
 
bought some of this stuff to try...

Pectinex... apparently a few drops in water then add orange slices to soak for a few hours and it will dissolve all that white stuff (pectin) and leave nice clean orange slices... or so they say. preps them nicely for freeze drying. i've done strawberries, apples, pears & bananas so far with good success. only downside is the time... takes 24 -32 hours to cycle.
 
i'm not trying to make it, but just trying to understand it.
after your done, is the pectin the juice or the apple pulp?

To extract pectin from apples, follow this simple process:
  1. Cut 2 pounds of tart green apples, with the skin, into pieces.
  2. Add pieces to 4 cups of water and 1 tablespoon of lemon juice.
  3. Let apples boil for 30 minutes, until the volume reduces in half.
  4. Strain apples through a cheesecloth.
  5. Boil apples for another 20 minutes.
  6. Pour juices into a sanitized jar and keep it in the refrigerator.
 
From your description it looks like you're straining off the juices, then continue to boil the pulp? That would be strange if you then preserve the juice, not the pulp.

Going by this description I'd say you want the juice. So maybe you boil the juice for 20 more minutes to concentrate it?
