Flubber B Gone.....

Usually anything I stuff (zucchini, peppers, tomatoes, etc.) is my way of getting rid of leftovers. :)

Right now I have some leftover brown rice in the fridge and some ground pork in the freezer. I thought what I'd do is brown, drain and rinse the pork, then mix it with the brown rice, throw in some sauteed onions and garlic, and maybe a little chili garlic sauce ... and then fill the zucchini halves, top them with some parm and bake them for about 20 mins.

This how I cook most of the time, to be honest ... a little of this, a little of that and hope it turns out ok. Usually it does, but sometimes I wind up with a really spectacular fail. In which case I order pizza. :D
 
Sounds great Kara...reminds me, I need to make a batch of rice today. I had one of those "spectacular fails" according to my husband today at lunch time. I told him a great option would be to boogie on back to the kitchen and make himself something else then. Jeesh! I cooked and everything!

Notes from the day so far:

Woke up early, dropped the hoodums off at camp. No time for breakfast.

Did some power shopping:hurray: Hussled home and made the above mentioned failure, I ate it and didn't think it was terrible. It was marinated porabella mushroom caps w/ saute'd swiss chard (that I ran out and picked fresh even though I was hurrying...grrrr) topped w/ a half slice of swiss cheese. Along with it (cuz I'm nice and was fussing) I made black bean salsa w/ corn chips. My husband looked like I tried to feed him a frog!!!:toetap05:

I'm going to hop on the total gym. I'm thinking of getting a regular weight bar (I know there's a better name for that...lol). They were $30ish at Walmart but I had already filled my cart on this trip and thought I'd better hold off until next time....lol

The garden has gone crazy. I have so many veggies they won't fit in my fridge. Tonight I'm going to make an enormous stir fry. I think I was going to do that yesterday, but ran out of time.

Hey a really cool thing happened yesterday. I tried on a bathing suit from last year, too big! I knew all my cloths were getting too big, but I didn't think a stretchy bathing suit would be.:willy_nilly:

My husband & I are thinking about buying the boys a trampoline for their birthdays. I wonder if jumping on that would be good exercise. It sure would be fun. I wonder if the neighbors will think they've just tuned into an episode of "Girls on Trampolines" LOL Remember The Man Show.

Whoo hooo! I remember a time I went to buy new workout pants - always before I'd bought XLs and this time I had to drop down to medium. Who thought that lycra and spandex could actually sag? :D

It's a great feeling isn't it?

It IS an awesome feeling. Wanna know something weird though. I keep buying my cloths too big because my mind doesn't believe that I'm really this smaller size...lol or maybe I'm just a little afraid that it won't last, but it has for a long time. What a goofball I am.:blush5:
 
Same here. The biggest problem I'm having right now is figuring out what size I am. I wind up taking 3 or 4 of each item into the dressing room - in various sizes ranging from 14 all the way down to an 8. It's so odd to realize that the size varies so much between brands.
 
It's a cookfest today!!! This garden is going to kill me. I have a full laundry basket of zucchini and yellow squash. So far I've made, zucchini lasagna; zucchini chili, roasted cauliflower and roman beans and blueberry corn muffins.

It also has been a good food day. Skipped breakfast again running the hoodlums around. I went out to the garden and picked a big fresh salad for lunch (leaf & romaine lettuce, bell pepper, cucumber, snow peas and roman beans) added chi chi beans and tomato. Filling and delish.

Having a snack now (to keep me out of the muffins..lol) blueberries w/a plop of vanilla yogurt.

I have sparing class tonight. It's gonna be a hot one. Can't wait to go though. I had hoped to get in a total gym work out, but I'm running out of time. Maybe later after the kiddos go to bed.
 
Woke up late and had a really rushed morning. Ran the kiddos to their last day of camp and stopped at the grocery store on the way home. Saw one of my kid's teachers that I really like. She really up on health and nutrition and is started a health and wellness center out of her home. I'm really excited about it and am going to call her.

Breakfast: 2 Veggie sausages & 1 egg w/ salsa = awesome!!! I'm also boiling some eggs for my salads for the weekend.

Off to do a quick workout/shower/quick clean up/go to the kids showcase/and get ready to go to our favorite Chinese buffet (the kids call it the "fancy restaurant"...lol) Not super healthy food buy any means, but I've got some great salads planned for the weekend and that pot of veggie chili waiting so it'll all even out.

Something cool (proud of me:)) We went to the restaurant and I didn't really pig out. I tend act like restaurant meals are my last meal...lol It's because we so rarely go anywhere that it was a huge event. But lately, we've actually been going a little more and now in my mind, I can behave. How silly the mind is...lol

Had a weirdo, yet pretty healthy breakfast...leftover veggie lasagna.

Lunch: Veggie chili

The kiddos wanted to go swimming. I put on my......get this....bikini and although I didn't look like a Victoria's Secrets model, not disgusting. While roasting my parts on the deck, I did some leg lifts/planks/side planks and crunches. They want to go back after dinner, I may try to stick my toe in the pool but dang it's cold! I'll be researching the solar heater tonight.

OH My husband gave the thumbs up for the trampoline. Hopefully it will be here and up by next week so I....I mean the kids can start jumping.

When you have kids, your eventually realize that it's all about the presentation when it comes to food. My kids have decided that "Kidz Cuisine" is the coolest thing ever invented. I, of course, know that it's a tiny tv dinner filled w/ complete crapola!!! I caved once and saved the trays. Now when I fill them w/ my own food, they still shout w/ joy, "YAY Kidz Cuisine!!!" cool huh? As I was filling the little trays tonight I got to thinking that they are really the perfect preportion little size plate for ME! I put my salad in the "big" part, a tiny scoop of veggie chili in one of the smaller ones and prolly about 4 tablespoons..lol of the kids organic mac & cheese in the tiny one. Perfect!

Well, I didn't end up swimming, my goodness the pool is cold w/ all this rain we've gotten (or I'm a wimp...lol)

We came in and I was already to haul out some nasty snacks for the kiddos and my little guys stops me and says, "Hey, I know, how about some grapefruit and some yogurt." After I picked myself up off the floor, I said sure and made it. I came up w/ a cool thing for mine. I added a wee bit of almond flavoring to it, oh my goodness it was yummy. It also had some fresh blueberies and a couple tablespoons of muslix mix w/ nuts.

I worked out on the total trainer tonight and then some hand weights and floor exercises. I was assessing the bod situation today, I think I still have a long way to go...there's just still flubber. I'm really all over the place w/ my diet and exercise, I need a detailed plan of what to do everyday, like a check list. I'm going to work on it and put it in writing in front of my face. It's just all to vague right now for me......

Yummy breakfast: Saute'd kale from the garden w/ garlic powder/salt/pepper & hot pepper flakes, on a sprouted grain toast w/ pepper jack cheese and veggie bacon. Could have easily scarfed down 2 but didn't do it.

Lunch: My sil made homemade swiss chard pizza on foccachia bread (I'm sure I spelled that wrong..lol) It was unbelievable good.

Dinner: bowl of zucchini bread and other piece of the swiss chard pizza. mmmmmmmmm

*We ran up and got the trampoline. I should be jumpin' tomorrow..YAY!

A test of my willpower: My little guy is forcing me to make chocolate chip cookies. Cookie dough is my weakness...UGH *wish me luck, I'm goin' in*

Hey there. Sounds like you're doing really well ... the breakfast sounds delish. I love new and non-breakfasty things for breakfast.

I have to say that planning is the only thing that keeps me sane. I use an excel spreadsheet (yes, I'm a geek) to plan out my meals and snacks for the week. It makes it so much easier and then the rest of the week I dn't have to think about food unless I want to. :)
 
I'd love to be able to meal plan for the week. I've tried it and it just makes my head spin. I have real issues w/ planning...lol (see goofy post "Exercise ADHD). I want to be an organized person, but I'm just not sure I'll ever get there.
 
Oh my goodness what a busy day we had yesterday. We didn't stop for a single second.

Started off making my new favorite swiss chard on toasted sprouted grain bread sandwhich. This time I added some crumbled Morningstar farm breakfast sausage (the secret to making them taste better is to add a little more sage and pepper). My son found a yellow squash that intriged him (it was twins...lol) so I sliced that up and saute'd it, they looked like little snowmen, he ate a ton of them w/ toast...lol

Skipped lunch...just too busy. We were setting up the trampoline. What a job THAT was. It took much longer than we expected. But, it was so worth it. What FUN it is. I'll be jumping often, even if the neighbors do think I'm a wackjob.

I zoomed in at the last minute and put together a pretty nice dinner. I saute'd more swiss chard...lol added a little bit of Ragu Garlic Parmisian Alfredo sauce (ummm, I didn't say healthy, but darn tasty ;)) and some hot pepper flakes and rolled it up in a corn tortilla and cover w/ *ACK* more Alfredo sauce. Okay, the next versions are healthier. I saute'd up some chicken peices w/ salsa & black beans and not much cheese and rolled them up and topped w/ more diluted salsa. And also made a vegge version for me w/ the leftover zucchini chili.

We were too late to go to taekwondo, so we went to the drive in instead to see "G Force." Very cute and very goofy, but the kids liked it. Pretty much blew it dipping into the crinkly bags. blah.
 
Going to try to get back to my regularly scheduled program today!!!!

Starting off w/ just coffee. Need to detox from the chips! The salt makes me feet hurt, I'm hobbling this morning.

Lunch: Big salad

Dinner: yet to be determined.

Taking the kiddos swimming this morning, it's supposed to rain later. I will be making it to taekwondo tonight. And, I'm sure there will be bouncing involved in the day at some point...lol
 
Busy week, I've been chasing my tail (and haven't caught it yet!) I need to figure out how to be more people. I'm having a battle between getting the in the house things done and the out of the house things done. The in the house things are losing! Yesterday I picked a half bushel of roman beans (my little guy helped). There's still about that much more to pick today. I need to blanch and freeze them. We picked peaches yesterday too. The boys and I cleared the garden of all the squash and cucumbers that have gotten too big and the leaves from the picked cauliflower and fed them to the cows next door....we just love those cows!:) The boys wanted to go swimming so I fit that in and then made them homemade pizza, also made a thin crust swiss chard pizza too. So those were the highlights add in some laundry and mom duties and that has been my life.:svengo:

Kid notes: My little guy has been cracking me up. He used to be my picky eater. But lately, he's been following me out to the garden when I pick our lunch salad and picking his own lunch. He's so proud of this. Yesterday he was experimenting w/ cucumbers, snow peas and dill. He said he was making his own pickles by biting them together. He put them all on a cute tray w/a boiled egg and just had a blast playing as he was eating. The moral of the story: Play w/ your food, it's fun:biggrinjester:

Today's plan: P90X workout. Aerobic vaccuming...LOL Deep knee bend bean picking, freeze the beans grrr, I mean brr, a few errands, and taekwondo sparing night.

Being a little honest w/ myself. This is a really busy time of year and the last month I get to enjoy my kids before school. I'm probably going to be in maintenance mode until September and there's a more regular schedule. At that time, I'll kick it back in gear. I'm okay with that, this is not a race, it's real life and it has to be a happy one.

*wheeze* *Gasp* *ACK* *OMG*

Went outside w/ every intention of jumping on the trampoline for 30 minutes. (yes, I know I said I was going to do the P90X workout today, I had a new brainfart and went w/ it...lol) I jumped for 10 minutes. I felt a wee bit of ouchieness in my back, my back is my weak point, so I thought it better to stop there to make sure I'm not hurting myself. I then realized that I was out of breath already anyway and starting to wheeze! What the heck is THAT all about! So, there's that for this morning..10 minutes...what a wimp! I shall redeem myself at taekwondo tonight!

Oh! I forgot to add the daily menu (my goodness I'm chirpy today...lol)

Breakfast: Me..coffee kiddos, cereal n blueberries.

Lunch: Buffalo "chickn" (morningstar farms) salads, kiddos, either "chicken" sandwiches or pbj

Dinner (excited to make this) Cabbage/noodles & peas. I found a recipe in Rachel Rays magazine (I love her magazine!) Sounds yummy, I'll let ya know how it goes over.

Update on the recipe above: OMG I have a new addiction. The first night I put it over noodles, so not a totally healthy meal, but since then I've been eating the leftover veggie mixture alone. I will ALWAYS have this on hand. Here's my version if you want to give it a go.

1 shredded cabbage
1 small bunch green onions
salt/pepper/ground ginger (i'm not one to measure...lol)
frozen green peas
soy sauce (I use Braggs Liquid Aminos, it's way healthier than reg. soy sauce and tastes the same, very low sodium too)

Saute' n eat...great over noodles, I think better plain.

Breakfast: Egg sandwich w/ smoked gouda cheese on rye! Healthy NOOOOO, delish...absolutely!

no lunch...we do more of a brunch on the weekend and skip lunch.

Snack: Half of an avocado w/ garlic powder salt n pepper and salsa in the little spot where the seed was (I love cute food). I had a few corn chip crums w/ it.

Dinner: Made another batch of the cabbage n peas dish. Also made a bean salad out of leftover roasted beans/pinto beans/cucumber/tomato & italian dressing. Had a veggie burger sans bun w/ it.

The garden is still trying to get me. I picked another bushel of roman beans! And I know now where mosquitoes spend their day...UNDER MY BEAN PLANTS grrr I must have lost weight due to blood loss.:svengo:

Oh my goodness this summer has been flying by so quickly! I wish I knew a way to slow it down. I'm one of those moms that doesn't want her kids to go back to school. The kids and I have been having fun swimming. Yesterday, I swam for 35 minutes w/o stopping. I've been a little afraid to try the trampoline again, but I may give it another go, it sure is fun. I've been getting some mini workouts in at night on the total gym. Funny thing, I noticed last night that I have no under the arm wiggly gigglies anymore...lol There are actually muscles there! I'm still in the treading water mode for the rest of August and am planning a big step up in the exercise department in September. My husband and I were talking last night, we want to lose another 10 pounds before the end of the year. We were talking where we started. He's exactly like me. I'm able to convince myself that I can "pull off" a higher weight and that I don't look heavy. But I flat out told him that we that was in our minds, he had a very big tummy and I was very big all over. I can't believe it, I weighed more when I started than he does now! We're both doing good. We just need to keep going and not get too comfy because we certainly aren't done.

Food Stuffs: The garden is really producing right now. I haven't had to go grocery shopping for 2 weeks. Last night I whipped up zucchini boats. Today, I'm going to make cauliflower 101 ways! j/k but there IS a lot of it. My sister in law comes over every couple of weeks to pick some goodies. This time she brought us a 2 gallon bag of blueberries that she had just picked. We've been having bowls of them at snacktime...yummy!

OH! I have something neat I'm going to try this week. I read on my veggie board that someone has been using swiss chard leaves in place of cabbage leaves for cabbage rolls. Of course, I'll have to come up w/ a neat veggie and maybe brown rice filling. I'll let ya know how that one comes out. Our swiss chard is enormous!

Stepped on the scale yesterday and was SO surprised, I lost 3 pounds and am back to 137. I zoom up and stick at 140 naturally now if I don't behave.:toetap05: So, I guess that means I've been eating a little better and the exercise is working! YAY! Hey, that also means, if I don't blow it, I only have 7 pounds until my next goal! Sounds kinda doable.

I went on a cooking frenzie yesterday. The fridge was loaded w/ garden stuffs that needed my attention. I felt like I was working in a restraurant, all the burners were going (could have used a few more) and the oven was full.

Made the following:

Roasted cauliflower topped w/ saute'd veggie sausage, peppers & onions. I used the breakfast "sausage" but added caraway seeds, hot pepper, garlic & sage. It was very good. Everyone loved it and I'll be making another batch today.

I cooked a big rack of skin removed chicken thighs w/ bread crumbs and garlic. Honestly, I made this for my dog, but the family raided it and gave compliments to the chef....lol

I saute'd up some swiss chard and added a tiny bit of Ragu garlic alfrado sauce and some ziti. Delish

Steamed a big pan of zucchini and summer squash.

And boiled some cauliflower to try something new w/ today. I read that you can use it instead of potatoes for "potato" salad. Hey, who couldn't use a few less starchy carbs right. I'll let ya know how that one works out. ***UPDATE*** Very good! Lighter than potato salad, but same great taste.

Off to do a quick workout, take the kiddos for a swim, throw in some laundry, chase the boys up to their pigsy, I mean bedroom to do some straightening and get them to their physicals by 3. It's also sparing night and it's gonna be a hot one!:svengo:

Updates: Pigsty clean, laundry moving right along, eggs boiled for salad, Total Gym & floor exercise work out done, off to make the kiddos some peach smoothies (love having peaches from our own tree!)

Didn't workout this morning but am going to do laps in the pool and would like to workout on the heavy bag a bit. I was pretty stinko at taekwondo last night, need to work on it I guess. I got kicked in the stomach...ACK! Definitely should have blocked that one!

Skipped breakfast, except for the pot of coffee. Had a cool lunch though, the cauliflower salad on top of cucumber "noodles." Just long ribbons made w/ a vegetable peeler. The presentation was nice. For some reason I don't eat as much when it looks nice on the plate. Oh! also had a boiled egg w/ cocktail sauce.

Dinner was delish and full of surprises! I asked my kiddos what they wanted me to make fully expecting them to say something like hot dogs. My little guy said wanted to know if I would make my taco fish recipe. Didn't have any fish, so he suggested a stir fry and told me he would pick some veggies from the garden...How cool is that! I've been wanting to make sushi too, not the raw fish kind, just the seasoned rice in nori sheets. They came out great! I added cucumber and immitation crab to them and everyone liked them. That is saying something w/ a completely new food in our house.

I managed to get quite a bit of swimming in today and jumped on the trampoline for awhile. It was a fun day.

I'm inspired today! I stayed up way too late and watched some You Tube videos on some raw food recipies. I'm setting a few goals for myself and they just feel a little more doable now. By March of next year (my third anniversary of not eating meat anymore) I'd like my diet to be completely vegan along w/ learning and working toward my next goal...raw foods!

So more about the videos and the recipes that I'm dying to try.

They made raw pasta n sauce out of zucchini. They did it too ways: 1. Peel the zucchini and either make ribbons w/ a veggie peeler to make wide flate "noodles" or they had a gadget that made them look just like angel hair (must research that one). Then they made a sauce in the blender w/ tomatoes, olive oil, sun roasted tomatoes, basil, oregano (one person used red peppers/ one didn't), just things you like really and then give it a buzz and heat it very slightly on the stove. They said once you toss the sauce into the zucchini, the zucchini takes on the texture of cooked pasta. How cool is that!?!?!? UPDATE: Very good, husband even liked it!! YAY

Next they did a neat thing w/ kale. I love kale steamed, but they showed a technique that made it look and feel steamed, but was actually raw. You cut it very finely into ribbons, add olive oil, lemon juice and salt and squish and massage it in the bowl until it wilts. My husband won't go for the lemon part, so I'm going to do olive oil, garlic powder, hot peper flakes and salt. Can't wait to try this. UPDATE: Very good, very crispy. I over salted a little. Next time, they'll be awesome

Also going to try this one for evening munchies. I love cute food and this is adorable! Make long flat cucumber slices w/ a mandalin or veggie peeler. Chop some veggies into sticks. Make a spread out of avocado, garlic powder and cayanne, spread on to the cucumber, fill w/ veggies and roll up.

And! as if I wasn't rambling enough....baked or dehydrated kale chips. Just washed kale leaves w/ olive oil and salt baked or dehydrated until crispy. Can't wait to try this one. I'm going to be looking into other munchies to throw in my dehydrator too.

So that's my inspiration for today.... **off to the garden**

I'm back from the garden...lol several days later. OMG It's a jungle in there!!!

I had a nice surprise this morning, I was positive I must have gained several pounds. I've been binging a little here and there, example last night at dinner.
I had 2 (yes 2) veggie burgers topped w/ onion, mushrooms, peppers, avocado, lettuce & tomoto on onion rolls. blah...I have no idea what came over me, I felt sickish afterward. Swam for about an hour, I don't THAT put a dent in the situation. Even had ice cream later.

Stepped on the scale this morning.....Lost 4 pounds. Riddle me that one!! So, I'm @ 136 w/ a short term goal of 130. I was giving myself until Christmast to do it, but hey, maybe it'll be soon!

Off to the kitchen to roast some italian beans w/ cherry tomatoes & cauliflower. Shred some zucchinis for my omletts, and try something new w/a few that got too big, some will be "zucchini noodles" but I want to try peeling and cutting some in thick slices and stuffing the section where the seeds are w/ ...hmmm something yummy. I'll let ya know how it works out....
