Seafood Chowder
To DD and anyone who loves seafood
Here's the recipe for the seafood chowder--Very easy to make.
Weigh out you seafood--Combo or just one type--Next time would like to have crab, shrimp and maybe even some fish pieces like sole fillets. Hint: If you buy shrimp that's unpeeled you need to peel them before you weigh them--SAVE the peels. They give great flavour.
Start with your liquid base-Water as much as you like-I would say about
500ml.
Add your fish to the water and let it cook. Remove the fish and you have your fish stock. Don't worry if there's fish pieces in the broth. Pick out the shrimp shells and discard.
Weigh out your vegetable allowance, with the majority being cauliflower-that's what thickens the chowder, then celery for great flovour and a little bit of onion.
Add the cauliflower cut into small pieces and some of your celery and the onion into your fish stock. Save some celery to slice up to add to the soup after you puree the mixture and don't forget to add your favourite seasonings-lots of fresh ground pepper and some sea salt.
Once the cauliflower and celery are well cooked, add SOME of the fish pieces-shrimp, crab, lobster etc and puree until blended then add your celery sliced thinly and some fish chunks-heat through and enjoy--didn't even need to eat a cracker with this one. Sprinkle with parsley or cilantro or some chives for added flavour. HINT: Save for next day if you can -it tastes even better!
P.S. When using celery in a recipe-make sure you also use the leafy top parts too. They give great flavour.
