I think the pan seared tuna might be a tough one to pull off if you don't have much expericence cooking fish.
I would do a chicken with a white wine sauce over veggies and rice. Or even easier would be to marinate a chicken breast in low-fat italian dressing then throw it on the george foreman. You could do likewise with veggies, slice up some zucchini and onions, let them sit in some low-fat italian, or olive oil and spices (basil, garlic salt, pepper, oregano) and do em stovetop or in the foreman. Summer squash is good too. Basiclly whatever type of veggies you like, mixed with spices you like
