OK - I'm not going to panic yet ;) I just have to leave here, and will be gone until around 7:00ish - and when I get home I'll research some recipes.

Most people bring either a lasagna, enchilada casserole, etc. Something cheesy and fattening.

I'd like to bring something I can eat!
 
OK, here are two ideas - what two sound better?
Tortilla Chip Casserole

Ingredients
16 oz Ground Turkey
1 cup chopped Onions
12 oz can Yellow Sweet Corn,
2 cup Black Beans
12 oz can Kidney Beans
2 cups Spanish Rice w/Tomatoes
1.5 cup shredded Cheddar Cheese
8 ounces Tortilla chips



Directions

Brown ground turkey with chopped onions. Put in bottom of sprayed casserole baking pan. Mix corn and beans in with cooked Spanish rice. Layer over browned turkey. Crush tortilla chips over the rice mixture. Spread cheese over top of casserole. Bake at 350 in preheated oven for 30 minutes or until cheese is melted. Garnish with fresh salsa and low fat sour cream.

Chicken Enchilada Casserole Print Recipe

Ingredients
3 lbs. boneless skinless chicken breast
18 corn tortillas, medium
3 cups enchilada sauce
5 cups colby and monterey jack cheese, shredded
1 cup onions


Directions

Preheat oven to 350 degrees.
Boil the chicken in water until done. Drain & chop into small pieces.
Chop onion.
Spray a 13x9" pan with cooking spray.
Dip tortillas in the enchilada sauce one at a time, making sure they are completely covered with sauce.
Layer covered tortillas in the bottom of the pan, it should take six.
Add a layer of chicken, onion & cheese. You don't want the tortillas to be completely covered with any one of the ingredients but you should put about half of the chicken & onion & about 1/3 of the cheese.
Add a another layer of the tortillas dipped in sauce.
Press down gently all over the pan.
Add the remaining chicken, onion and cheese mixture.
Add remaining layer of tortillas dipped in sauce & press down gently again all over the pan.
Add the remaining cheese on the top.
Bake for 30-45 minutes, until cheese is bubbly, starting to brown and the casserole is hot all the way through.

Ahhh...I hate the pressure!

I have to bring a casserole 3 times a year, a salad 3 times a year, host once, appetizers once and the other 4 times a year I get to just go and enjoy myself.

I really don't like bringing casseroles!

So...I have 2 votes for the enchiladas and 1 for the tortilla dish...

Any other suggestions? I shop tomorrow at 2:00 - prep by 3:00 and out the door at 6:30 for the wine club, so I'll have to narrow this down soon!

Well, I'll be getting ready for my walk soon - I'm almost nervous about meeting up with Pam again. I go from thinking I won't be able to keep up with her today to thinking I'll never beat yesterday's time...eeeek! So much pressure LOL!

You are smoking in the walking dear. You are truly inspiring. And the lbs keep coming off, slowly but surely.

Here are some walking/exercise sayings I found, enjoy:

-Walking can add minutes to your life. This enables you at 85 years old to spend an additional 5 months in a nursing home at $5000 per month.

-My grandmother started walking five miles a day when she was 60. Now she's 97 years old and we don't know where the hell she is.

-The only reason I would take up exercising is so that I could hear heavy breathing again.

-I joined a health club last year, spent about 400 bucks. Haven't lost a pound. Apparently you have to go there.

-I have to exercise early in the morning before my brain figures out what I'm doing.

-I like long walks, especially when they are taken by people who annoy me.

-The advantage of exercising every day is that you die healthier.

-If you are going to try cross-country skiing, start with a small country.

-You could run this over to your friends but why not just e-mail it to them!

As for the casserole, I think I'll go with the chicken enchilada - but my timing is all off...I realized I scheduled a DMV appointment for my MIL at 2:00, so I have to get this done before 1:00. To think I USED to love to cook!

Pinky, you CAN keep doing this, no matter how tired you are - we all can :D

OK - I went for my walk, and Pam wasn't there. I had the option to walk my normal pace or try and match hers...

The good news:

Lap 1 .25 mile 4.15
Lap 2 2.25 miles 24.30
Lap 3 2.25 miles 25.39
Lap 4 .25 mile 4.12

I beat my time with her by smidgin's - not a lot, but I now know I can do it alone - It just seems that there is no way I'm going to break down into the 10 minute mile catagory unless I jog/run and I don't think my chest will let me ;)
