Here's the pudding dessert recipe. It is really tasty. I've yet to meet someone that turns it down!
1 cup finely chopped pecans
1 cup flour
1/2 cup butter, melted
1 (8 ounce) pkg. cream cheese, softened
1 cup powdered sugar
1 (16 ounce) tub of Cool Whip
3 cups milk
1 (3.4 ounce) pkg instant vanilla pudding
1 (3.9 ounce) pkg instant chocolate pudding
Preheat oven to 400 degrees. Combine pecans, flour, and butter. Press into a 9x13 inch pan. Bake for 20-25 minutes. Let cool.
In a large bowl, beat together cream cheese and powdered sugar until smooth. Fold in half of the Cool Whip. Spread on top of cooled crust.
In a large bowl, combine milk, chocolate pudding mix, and vanilla pudding mix. Beat until thick. Pour over the cream cheese layer. Top with remaining whipped topping. Decorate with chocolate curls, or finely chopped nuts, or sprinkles.
You can easily substitute low fat choices for the Cool Whip, cream cheese and milk. Not a guilt-free desset, but certainly less-than-sinful!
I've also made this with different nuts. And last Easter I made this with lemon pudding instead of the chocolate and vanilla.
