Great to be served with pita chips!Very low in calories and fat.

Ingredients

  • 1 (16-ounce) package frozen black-eyed peas
  • 1/2 cup diced sweet red pepper
  • 1/2 cup sliced green onions
  • 1/4 cup minced fresh cilantro or parsley
  • 3 Tbl cider vinegar
  • 3 Tbl fat-free Italian dressing
  • 1/4 tsp salt
  • 1/4 tsp hot sauce
  • 1/8 tsp pepper
  • 1 clove garlic, minced

Instruction

  1. Cook peas according to package directions, omitting salt and fat; drain. Combine peas with remaining ingredients. Cover; chill at least 8 hours. Serve with pita chips
