Baked Oatmeal

For individuals who are always on-the-go. It's quick and easy, prepare it overnight.

Ingredients

  • 2 cups oatmeal (old fashioned or quick cooking)
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • 3 eggs beaten
  • ½ cup applesauce, chunky or regular
  • 1 tsp. cinnamon
  • ½ tsp. nutmeg
  • ½ cup brown sugar
  • 1 cup vanilla yogurt or maple syrup, for topping

Instruction

  1. Preheat the oven to 325°F
  2. In a large bowl, combine:
  3. 2 cups oatmeal
  4. 1 ½ teaspoons baking powder
  5. ½ tsp. salt
  6. Mix in:
  7. 1 cup milk
  8. 3 eggs, beaten
  9. ½ cup applesauce
  10. 1 tsp. cinnamon
  11. ½ tsp. nutmeg
  12. ½ cup brown sugar
  13. Pour into a greased casserole dish.
  14. Bake at 325°F for 45 mins.
  15. Serve hot with a top of vanilla yogurt or maple syrup.
