workout plan

Hey,

Well i've decided that it's time to start working out. About a year and a half ago i weighed 230lbs and since then i've dropped to about 175lbs (I'm 6'1, 20years old). I basically cut out all extra unhealthy snacks, pop etc and started drinking water instead with the occasional beer(s) when i go out on weekends. I still got some flab and i basically want replace it with muscle. However, i dont really know where to start. I would like to workout 5 times a week and i would like to focus on my upper body (chest, back, arms, abs, shoulders).

So any suggestions on a workout plan? i was thinking something like this (please keep in mind that i know nothing...im just throwing this out there):

Monday: chest, back, shoulders
Tuesday: HIIT, arms (tri + bi), abs, legs
Wednesday: chest, back, shoulders
Thursday: HIIT, arms (tri + bi), abs, legs
Friday: chest, back, shoulders

on the weekend i would like to just do pushups and situps/crunches at home.

It's hard to change my meals because my grandmother cooks for my entire family and i wont have time to cook for myself (with school + work). I usually eat a big dinner (pasta about 3 times a week, chicken or steak about twice a week, tuna and mainly fish on fridays). That's what i have for dinner. For lunch i just eat a sub (from subway or mr. sub) or have eggs. I never eat breakfest...just drink a coffee. I usually have a snack between lunch and dinner and it's usually some fruits. At night after dinner (around 10ish) i sometimes have some cheese (not much) or a peanut butter sandwich. i can change what i eat anywhere except for dinner.

I don't want to gain huge masses or muscle like a body builder or anything. i just want to bring my body fat down to about 10% and stay lean with nice muscle definition.

If anybody can give me suggestions with regards to a workout plan that would be great. I don't know if the one i proposed is good or not. And maybe a suggestion of how many reps/sets i should do and on what machine.
