I don't care for oatmeal. But those meals look pretty good!
Maybe not stepping on the scale will be good. You will be forced to look for other changes, the scale can be evil, and sometimes it lies! You could do weekly measurements or something instead, or even just try on a pair of tight pants and shirt that you have and want to fit into eventually, that will give you an idea of your progress and they slowly start fitting better.
