Strange how people differ, I didn't really have any problem cutting out carbs, I basically don't have bread anymore, I eat very little pasta or rice or any grains at all to be honest, very little cereal. The one thing I can't give up is meat, I swear meat is the best thing ever, nice thick cut ribeye steak cannot be beaten, and bacon as well, bacon is surprisingly low cal, you can have a bacon roll and the roll will be more calories than the bacon!
I think you should just get a scale of your own, I got a decent weight watchers digital one which is accurate down to the 0.1lb (overkill but good to know it's accurate!), I had similar fears of becoming obsessed with weighing and set a strict weekly weigh time for myself, I stuck to that for about 12-13 weeks before I started measuring in between weekly and then even more frequently than that, it's really helped me understand how my weight fluctuates up and down naturally during the week and how that can make it look like you've not lost much when in fact you have. You just have to be very careful that you don't assume the worst if you see an increase (which you may if you weigh every few days).
I know what you mean about sticking to routine of a few meals, I have basically several fairly strict routines that I stick to in order to keep my calories in check, most of them aren't "good" routines, but they're the lesser of 2 evils in most cases.
1) Eat weight watchers meals for dinner approx 6 days out of every 10, always with some veg, extremely low cal
2) Cut out all salt, I'm using this opportunity of losing weight to correct my salt intake and I've replaced it with black pepper, lots and lots of it.
3) Eat at least one whole piece of fruit a day, usually when I get home from work to help curb hungar from long day.
4) Not eat breakfast
5) Eat salads at lunch, I get stuff from the "shapers" range from my local boots shop, basically a meal deal of meal/snack/drink where meal is salad, snack is fruit and drink is low cal something or other
6) Have meat heavy meals on 4 out roughly every 10 days, I will have 1 or 2 steaks in 10 days period usually, ribs at least once and chicken wings or something like that, most of the time the ribs and wings are just on their own, the steak is part of a meal. Lots of protein for when I do my upper body weight training.
7) Stick to Pepsi Max religiously, seriously I drink this stuff like there's no tomorrow, it's basically calorie free (about 1 cal per 250ml!!!), it may not be great for me but it's low cal and I can just chug the stuff, I'll go through a 2l bottle in about 2 days.
8) No sugar in tea/coffee, just don't need it now, tastes fine without it
9) Not afraid to cheat one day a week and get a takeaway, usually subsidised by eating not much else for the rest of the day and the following day.
That's about all I do, so it's pretty basic, there's a few weight watchers meals I'm more fond of, I buy the same fruit and veg every week, I buy the same lunches most days, I always drink Pepsi Max. I think it's part of what makes the diet so manageable, the same kind of calories on the box for every meal, I track my calories using livestrong.com every day but now I can pretty much guess what my daily amount is so far.
yeah Annie Bot is a real bee-otch, I usually get completely prawned when I face her, her burst is just effin' stupid. I finihed Deus Ex HR recently, that was really epic you should definitely play that if you've not already. Also been hammering Hard Reset which is also really good.
