Good for you!! Well earned.
Funny how that works, the truth is any diet will work so long as you burn more calories than you eat. Some are certainly healthier than others, but calories are what counts.

You don't have to fall back on your old habits, just keep working on things and posting here, it will really help. Certainly helps me.

I dont think i would have survived so far if i wasn't here. I have a lot of determination and willpower but that only gets you so far.

I feel like my diary is more the emotional and mental side of this whole thing, as opposed to those who post dietary things. I have the calorie tracking, daily exercise, etc on point and havent slipped. But controlling the emotional and mental wellness is where i need the most help.
I am always so appreciative of you guys who stop in and offer advice and support.

I made a really good quesadilla the other day that was under 500 calories and that seemed to hit the spot...perhaps ill make one again for dinner tonight..maybe with some tomato soup.
Knowing what works for you makes SUCH a difference. Enjoy!

I love cheese too. I'm always glad that I have just eaten breakfast when I read the diaries. A quesadilla sounds delicious.
Hope you got to go for that walk.

Well, the quesadilla went out the window. I decided i wanted a steak so we ordered take away for the first time in 3 months.
I managed to choose healthy items and stay well within my calorie range.

When i ran my errands i realized i didnt want to walk in the cold so i hit the exercise bike for 45 minutes. I felt good after moving around..better than usual for the first day of my visitor. Haha
 
i have a few screenshots i hope i can upload here from my phone. They basically are just calorie charts from the week. I hope they arent too small.

A steak sounds like a healthier option anyway. The screenshots show up well & also show a successful couple of weeks :)
 
Way to go, Steph! Just finished reading through your diary and I am beyond excited and inspired.. in fact, I feel embarrassed now for replying to you without knowing how much work you've already done. I don't get on here early enough or long enough generally, but I think your diary entries have inspired me to do more reading than writing lol

In all seriousness, I'm impressed with all of the progress you made long before you showed up here and the inroads you are continuing to make now. I'm inspired by how open you are about all things Steph and by your determination has an infectious quality to it, so, thank you! hehe

Also, I keep thinking about the homemade cauliflower crust idea you had... my wheels are turning, too, and I bet it'd be (just as if not more) delicious. I'm also going to see if I can't think up some alternative to cheese for your monthly visitor. Like you, I understand the texture issue at hand. I tend to want sweet one min then savoury the next- but that's neither here nor there now is it? lol Keep up the great work!

I never really thought i would get into this journaling thing as much as i am. Honestly i was so relieved to just throw that initial information out there and that kind of opened the floodgates. It helps that theres no judgement...that makes all the difference in the world.

I really dont know where the determination comes from. I know it comes partly from wanting to do something for myself. Im not going to lie and say that its not slightly fueled by anger. Anger at myself for ignoring my own well being for so long...probably not the healthiest way of processing things but hell...at least its getting channeled the right way.

Anyhoo..on a lighter note...whats the hot take on vegan cheese? I was thinking about getting some the next time i get groceries...anyone got opinions on it?
 
I like the graph breaking your weekly calories down by meal, very informative. I eat quite a few vegan meals for an omnivore but the cheeses tend to be so processed I avoid them for my stomach's sake and just have the real thing when the cravings hit. Except for cashew "parmesan" but that won't give you the consistency factor you want. If you'd be interested in making your own I have a couple of video suggestions though! Love cooking videos...

Its been an immense help in the calorie tracking. I also used it to create nutrition info and serving size for the savory oatmeal quiche cups (i think thats what im calling them haha) that i made yesterday.

Looove me some cooking videos. Half my youtube subscriptions are cooking channels. Some of my more "interesting" creations were inspired from something i saw on youtube.
If i recall correctly vegan cheese doesnt melt the same way as regular cheese does. But depending on taste, might be a good addition to a salad or in some other cold preparation. I think i might spring for a small bag of shredded vegan cheese...for science. Haha
 
Thanks for the links! Im definitely going to check those out. I'll have to do a calorie comparison and see if the difference is acceptable.
Ive already switched to a low fat low cal mayo..which if im honest isnt great taste wise but isnt terrible. I might employ a half and half technique so i still get the satisfaction of actual mayo, without all the fat and calories.

Also, my Sunday batch cooking experiment went well. I have to tweak the recipe a bit but i will probably post it in the near future.
I made the savory oatmeal and used it as a base for a scrambled egg/turkey sausage mixture. The oats had sauteed green pepper, green onion, tomato and spinach. Overall i made a dozen little oat and egg quiches?(still trying to find a name for them). Each serving is 3 of them that clock in at about 277 per serving.
I had them for breakfast this morning and i was pleased with the results. Filling and tasty. The oats i think needed a bit more time in the oven to crisp up a bit more. Overall, not too bad for the first attempt.

Good vegan cheese is not less calorific than real cheese. If lower calories is your goal you´re better off just having half as much as you´d otherwise have.
 
Have to agree with LaMa, cheese is good food and good for you, but the only way to lower the calories is to eat less. For that reason I rarely eat cheese any more, when I do I always get the best and best tasting. Don't want to waste my few cheese calories on something less than the best. Good cheese does cost more, but I eat so little of it I know I am spending less on cheese than I used to when I ate a lot of mediocre cheese.

Keep up the good work Steph! Your oat and egg things sound really good!
