I did just finish a chicken, tomato, lettuce, and honey mustard pita though..

I enjoyed watchin' the Steeler parade a lil bit ago thanks to sweetheart Randy!! ;)

Man, sure wish I could have been there in person!
I was there in spirit though!

Cleaning is going slow...lol...I really need to get a move on it..

You guys know I like to share recipes here from time to time and I have another for ya...
This is SO GOOD!

Zucchini Lasagna

INGREDIENTS

1/2 lb lasagna noodles, cooked in unsalted water
3/4 c part-skim mozzarella cheese, grated
1-1/2 c fat free cottage cheese
1/4 c Parmesan cheese, grated
1-1/2 c raw zucchini, sliced
2-1/2 c no salt added tomato sauce
2 tsp basil, dried
2 tsp oregano, dried
1/4 c onion, chopped
1 clove garlic
1/8 tsp black pepper

DIRECTIONS

1. Preheat oven to 350 °F.
Lightly spray 9- by 13-inch baking dish with vegetable oil spray.
(*I use evoo spray)

2. In small bowl, combine 1/8 cup mozzarella and 1 tablespoon Parmesan cheese. Set aside.

3. In medium bowl, combine remaining mozzarella and Parmesan cheese with all of the cottage cheese. Mix well and set aside.

4. Combine tomato sauce with remaining ingredients.
Spread thin layer of tomato sauce in bottom of baking dish.
Add a third of noodles in single layer.
Spread half of cottage cheese mixture on top.
Add layer of zucchini.

5. Repeat layering. Add thin coating of sauce.
Top with noodles, sauce, and reserved cheese mixture.
Cover with aluminum foil.

6. Bake for 30-40 minutes.
Cool for 10-15 minutes.

Protein: 16.4 g

THEN, I met my hubby...FINALLY, a real man with a heart!
We dated 2 1/2 years before getting married. :)

We have now been together 17 1/2 years..Married 15..

He's 37 - I'm 35

We'll get older tho bc our B-Day's are around the corner..lol..*cries*

His is 4.8 and mine is 5.28 I was born on Memorial Day.

Sorry I have been MIA for the last few weeks. Or at least it looked like I was. I was still reading up on ya. Keepin' track you could say. But I literally only ever had time to read, never write anything.

Sorry to hear about the job. I really hope that Miss Mary is able to get some help. That sounds just awful.
Way to go to your Steelers. Though I will admit to rooting for the Cards. But not because I don't like the Steelers, just because when's the next time the Card's will ever get to the big game? I mean it'll probably be like "never"! LOL And I always like to root for the underdog.
Congrats to getting back into the weight-loss groove. I know how much you have struggled. And I know how hard it can be to get up and out of that rutt having been there myself.
Love the fact that you and hubby have been going stong for 17 1/2 years. Dh and myself will be celebrating 13 this summer.

I am really liking BL this season. And I think that if the truth were to be told that many of us on this forum were a "Joelle" at one time or another. Completely in denial of what is right in front of our faces.
Frankly I am surprised that she lasted as long as she did.

I didn't get everything finished yesterday bc I got side-tracked with sacking up more goodwill donations. My gosh, I could open a store with all the fat clothes and super skinny clothes I found.. :sifone:

A lot came from Cory's closet as well.
He just keeps gettin' taller and taller!
He's now 6 ft. AT 15! *YIKES*

Lastly, it'll be time for me to work on an experiment w/Steve (LMAO) and then gettin' on the exercise bike.

You a nut girl :). Hope everything's going OK. This Step diet really seems to be working great for you. How many steps does it have you going up incrementely?
