  • 1-2 tablespoons of oil
  • 2 tablespoons tomato paste
  • 2 medium red pepper
  • 2 large cloves garlic, finely chopped
  • 2 eggs
  • 1 teaspoon ground cumin
  • 1 can chopped tomatoes
  • salt
  • pepper
  • 1 teaspoon sweet paprika
  • chilli
1.Red pepper washed, cut into strips or cubes.
2.In a skillet heat oil, add cumin, garlic, chopped peppers cook stirring occasionally for 5 minutes on medium heat.
3.Then add the tomato paste, canned tomatoes, whole simmer for 4 minutes, stirring from time to time, then season to taste with salt, pepper and chilli.
4.In the sauce to make two holes into which you knock eggs and fry over low heat for a few minutes to shear protein.
5.Remove from heat and serve with chopped greens.
