Yeah, maybe there is some water weight in that loss, but there is fat in there too. Be proud of your initial accomplishment. Sometimes I think that water loss is there just so that we can feel good about that initial weight change, which provides impetus to continue working at it. Positive reinforcement, y'know?
I also make my own sushi - living up here in East Nowhere, BC, there isn't any sushi worth the name.
Don't feel bound by tradition, or other's expectations - feel free to experiment!
Okay, I admit I also only use proper sushi rice, but after I made the suggestion to you I'm frankly curious as to how it would turn out.
I wonder if I can find any suitable brown rice in this town...
