O.H.D. the spice/herb for this week is coriander...

Coriander
Coriandrum sativum
Fam: Umbelliferae
Spice Description
Coriander is the seed of a small plant. The seeds are almost spherical, one end being slightly pointed, the other slightly flattened. There are many longitudinal ridges. The length of the seed is 3 - 5 mm (1/8” - 3/16”) and the colour, when dried, is usually brown, but may be green or off white. The seed is generally sold dried and in this state is apt to split into halves to reveal two partially hollow hemispheres and occasionally some internal powdery matter. Coriander is available both whole and ground. The fresh leaves of the plant are called cilantro and are used as an herb.
Bouquet: Seeds are sweet and aromatic when ripe. Unripe seeds are said to have an offensive smell. The leaves have a distinctive fragrance.
Flavour: The seeds are warm, mild and sweetish. There is a citrus undertone similar to orange peel. The leaves combine well with many pungent dishes from India, Mexico and the Middle East.

Guacamole
(Recipe Jo Wagner)
2 medium avocados (ripe)
1 shallot (finely chopped or crushed)
1 clove garlic (crushed)
½ - 1 finely chopped green chilli (seed it first if you can't stand the heat!)
1 medium tomato (finely diced)
juice of 1 lime
1 handful coriander leaves (chopped)
Cut through the avocados around the seed, scoop the flesh into a bowl and reserve the stones for later. Mash the flesh up with a fork, mix with the lime juice and combine with all the other ingredients. Keep the guacamole in the bowl with the avocado stone, to prevent it from going brown.

I love cilantro (aka coriander). Here's a recipe I use it in that goes well with guacamole....fresh veggies, no added fat, protein. Eat with chips (baked or some other healthier choice).

Ceviche - popular in many Latin American countries


½-¾ lb raw shrimp, peeled, deveined, rinsed and patted dry
4-5 limes, roll on counter or microwave to get maximum juice
1 small white onion, chop in small dice
2 medium tomatoes, cut and squeeze out pulp, small dice
1 small jalapeno, seeded and finely diced
1-2 T Cilantro, chopped

Cut shrimp into small pieces, similar size to tomato and onion. Put in non-reactive bowl (such as glass or ceramic) with lime juice from 3-4 limes. Put in refrigerator for 3 to 4 hours, depending on how small the shrimp is cut up (1-2 more hours if the shrimp is not cut small). Shrimp is fully cooked by the lime juice when the shrimp is completely opaque and pink/white. Drain, reserving liquid. Gently combine shrimp, onion, tomato, and jalapeno and add back a small amount of lime liquid used to cook shrimp (this is safe to do!) or use fresh juice from remaining lime. Refrigerate until ready to serve (best served freshly made). Add cilantro before serving with tortilla chips.

(Optional: serve alongside with fresh, diced avocado (plain or lime juice squeezed on top
 
Hey guys im still around, believe it or not im having a bit of hard time dealing with reaching my goal (getting under 100 kg) the whole fear of losing weight thing I think. I feel disappointed this week and I feel I should have lost more weight and I don’t know why I feel like that because 800 grams is great….. Who no’s what the hell is going on in my head because I sure don’t.

Hi patty thanks for the recipe Hun, I love cooking but had stopped doing it for about a year for fear of cooking the wrong things (to much fat ect) but I have got it all worked out now and im loving being back in the kitchen so if you find anymore recipes you would like to share I would love to have them. The only problem is we call our foods different thing lol so can you tell me what is Cilantro, thanks mate.

Hi Rose, yes, 800g is great. Who understands how the mind works, I sure don't. Losing weight is such a major undertaking, and it affects us all in different ways, and it takes time to come to terms with change. You will get there. Keep going. Thinking of you.
